    Takehiro 240mm Takobiki Iron & SK Carbon Tool Steel PC Poplar
    These knives are a factory forged mild steel cladding (jigane) and tool steel cutting layer (hagane). This style of inexpensive single bevel knife overlaps the small scale industrial and hand work worlds of Japanese knife making. They are affordable, solid performers that have reliable straight edges and good grinds, but without much flash or polish.
    These are a great choice for those in search of an affordable or starter single bevel knife. It has all the benefits of traditional style, carbon steel sharpenability and cutting feel.
    Takehiro is made by Miki Hamono, which started in 1935 in Miki city, Japan.

    Bit of a silly question perhaps, but how would this style do in a sujihiki role?

      Hi, you would find this style of knife would steer a bit and feel wedgy when used like a sujihiki. If you are only cutting off the side rather than down the middle of meats and veggies you would get the most of this single bevel style of blade.
