Funny story, my first japanese knife was a Tadafusa 21cm aogami #2 with the bubinga handle gyuto, my mom gifted it to me right after graduating culinary school and I that same knife tattooed on my forearm.

Shun Classic Perfect Pairing Knife (discontinued a decade ago). My roommate got one on clearance from the local Williams Sonoma. Years later, covid made me learn to use knives and my brother gave me a starter set of Shun Classic and I remembered my roommates knife from nearly a decade before and just don't like traditional pairing knives because they just don't fit my big hands as I'm a blade grip pairer... shopping petty knives and found my old roommates knife on ebay so I splurged. Fell in love so hard, where I never understood previously so I spent months scouring the internet for another one in good shape. I found a second one in the original branded sheath, so I have a spare!
I love that everyone has a different background when it comes down to cooking, but everyone came around to love Japanese knives all together..!
The knife-collecting journey has been fun and rewarding. Shun was my gateway. After that found a few forums, that sadly no longer exist. They were with all sorts of terms such as gyuto, sujihiki, VG-10, white steel. The Japanese knife world was large and mysterious, at least back then. It was easy to find an excuse to buy, I don't have a knife from that maker, in that shape or steel. Slowly I began to identify what I wanted in a knife, which led to a small maker and the ideal knife, at least for me.
Yup… I’ve spent about $12000+ at Knifewear in the last couple years… and that’s just at that store lol😂

Used to go to the store in Kelowna. Was very sad when it closed, but probably saved me a bundle. The experience was akin, I would think, to the kids finding their particular wand in Harry Potter. That’s what the first experience of wielding a Japanese knife felt like. It’s over ten years now, and every time I reach for any one of my several or more than several knives….it’s magic.

I have over 140 + knives in my collection. Some of my top knives in my collection are my Bob Kramer true Damascus Chef’s knife that was custom made for me, my 240mm Konosuke Fujiyama Swedish Carbon, my 270mm Nigara sg2 anmon sakimaru sujuhiki, my takada no hamono Ginsan 165mm nakiri, and my 150mm urushi fujiwara denka petty.
Bob kramer is nothing... not even close.... to a real Japanese artisan.... he's a copycat... nothing more with a lot of marketing crap...

I just picked up the same Hado 210 from you guys! It’s by far the smallest 210 Gyuto in my collection but it is a beautifully executed piece and a pleasure to use.

Too many knives? Nonsense I say! You wouldn't go to someone who appreciates art and tell them they have too many paintings! I only recently began collecting... as such, my humble roll mainly consists of a Kato SG2 petty (literally snagged the last one on your site so I'm pretty stoked lol) and a Sasame Gyuto 210MM. I'd love to add a Fujin AS Bunka to balance everything off though. Will you guys be getting some in stock anytime soon? Might pick up a Kokuen Bunka in that case.
That's an awesome collection! We may restock Fujin in May, but probably not before then. The Kokuen is amazing, I love mine!
Buy the Bob Kramer Carbon. Made in Seki and no industrial San Mai or Damascus. Just a great knife, it is a bit on the heavier side tho.
Easily my favorite is my 210 Masashi Kuroshu Gyuto. Got it engraved at Knifewear Ottawa so it's extra special to me.
For reference, my collection consists of: 240mm Myojin SG2 Gyuto, 240mm Nigara AS/S Gyuto, 210mm Yoshikane SKD, 210mm Masashi Kuroshi Gyuto, 210mm Mac MTH-80 (first ever knife), 180mm Nigara SG2 Nakiri, 165mm Saji Shinchu Damascus Nakiri, 165mm Shibata AS/S Santoku, 165mm Moritaka Honesuki, 160mm Takeda NAS Ko-Sasa, 150mm Tadafusa AS/S Petty, 135mm Takamura SG2 Petty, 120mm Kurosaki AS/S Fujin Petty, 90mm Saji Rainbow Damascus Petty.
That's an amazing collection, especially the Kuroshu!

Really enjoyed this! All are pretty cool but guys why is Skye not in front of the camera more? She obviously knows her stuff, has a great delivery and should be doing lots of videos!

@skye and anyone else interested in forced patina's... i also have a Fujimoto Korouchi 210 Gyuto that is my "experiment knife"... I recently forced a patina on it with... puréed onion!
For anyone wanting to try a forced patina... I highly recommend trying this method... I just took a couple of white onions and threw them in the blender and pulsed them up into a somewhat chunky purée... and packed the blade into the onion purée... it came out really well!

Oh! I also just remembered... after I left it to marinate in the onion purée overnight... i shook off most of the onion, but left the onion juice on it... and then sprinkled with pickling/kosher salt and let that sit for a couple hours - one of the best patinas I've seen!

I recommend Global knives, not the hardest steel, but gets sharp very quickly, very easy to sharpen and maintain.
Nathan's matsuba looks like a tiny sword, so cool.
For the masashi what would you recommend 210 or 240 ?

Great question! I already had something Bunka sized and didn't own a ko Bunka yet, that's about the only reason.

Tanaka x Myojin, Tanaka x Kyuzo, Tanaka x Morihiro, Nakagawa x Myojin and Jiro Nakagawa are the best preforming knives that I have ever used.

Wow. I’d never seen your channel but I when I saw it was 3 of you I though it would be a more varied selection. No love for Western style chef knives? I like both & own both( A Kramer & Miyabi) also own a selection of kitchen knives for knife guys( Tops, LT Wright, Benchmade, even a Peña chef knife). I was hoping you’d introduce me to Canadian made knives or North American in general.
Since we all work with Japanese knives, we all have a habit of buying a lot of them 😂

Seki city is where some of my spyderco knives are from
SImplest way to force a patina: boil white vinegar, turn off heat, let it sit for a second, and then full submerge the blade. The biggest thing to mess up though is you have to make sure your blade is TOTALLY clean.... scrub the crap out of it and then wipe it off with rubbing alcohol. Any oils or residue on the blade will block the patina process. You can do the vinegar dip over and over to get it super dark.
Ahhhh, I’ll bet that’s why mine turned out patchy! I’d washed it but there was likely still blade oil on the back bevel. I’ll try this out next. Thanks man!
@@skyelizotte7551 Yep, no problem. Drove me NUTS the first time I was acid washing a blade... it was super patchy until I figured out I needed to get it super clean first.

I have 6 Knives, Janagiba, Nakiri, Deba, Petty, Bunka and Gyuto. I like them all because every knive shines at its task. I have 4 from kanetsune seki from the zen bokashi series and thats the perfect look for me. Dark Handle, grey Damascus. ❤ i dont buy expensive knives made from stainless steel because i use them for the dirty work when sand and impuritys in the food are there and wenn i need to hold meet with a fork. I accidently hit a fork with my janagiba and i felt way more pain then the knive did😢
