Sauteing the vegetables in butter caramelizes them and brings out the sugars. Day old (dried) cornbread keeps the dressing from being too mushy and gives it texture.

I like that you boil your chopped veggies. I boil mine in water and pour veggies and water into the dressing. I also add chopped bell pepper. For seasoning,it's butter, sage, cayenne, salt, pepper, raw eggs,chicken broth and juice from the baked turkey. Next time, I'm going to try boiling my veggies in chicken stock or powder like tou do.

Sugar free cornbread is best. If possible make your cornbread three or four days before you make your dressing. You want the cornbread dry and crumbling. I love how she's not adding chicken and sausage. That is not the cornbread dressing I grew up on. But I'm only 76. 😂 why are folks not using a bowl? 🙄
I love how real she keeps it. As long as the flavor is there, adding some boxed items ain’t gonna hurt nothing. This is exactly how I make mine. 👌
