This is very similar to how my Mom makes them. Nothing like cold potato salad in the summer. My chore was to wash the potatoes, dry and peel them...and yup with a knife at the kitchen table over a sheet of newspaper to catch the skin.
That’s the only way I peel....with a knife over the newspaper. Drain the fries or anything fried on a brown paper bag. Old school Brooklyn style. Love the way she did the eggs too. ❤️.

Boil and peel 5 medium potatoes Chop up potatoes into diced pieces Place them in cold water Drain old water and cover potatoes with new water Boil potatoes in chicken bouillon powder and a little bit of salt for about 6-7 minutes (not too soft, not too hard) Drain potatoes and let them cool in fridge until cold Boil eggs (w/extra egg) Cold water and salt to pot of eggs Bring to a boil Take off of heat and put lid on Let cook off of heat for 14 minutes Strain water off Add cold water and ice cubes for eggs to sit and cool in Cut egg in half and scoop egg out of shell Cut eggs and put in bowl 3 tablespoons of mayonnaise Add muster to taste Add sugar to taste Add regular paprika 6 teaspoons of Sweet salad cubes, mini-pickles (sweet gherkins) chopped into pieces, or relish with as little juice as possible Add half of the potatoes Fold the potatoes into sauce Add a little bit more sugar, mustard, salad cubes to taste Add the other half of potatoes and mix Take extra egg, cut it up, and place on top Place paprika on top
While I never thought of myself as having black ancestry... Even just 1 or 2%...it's nice to know that that is where I possibly could have gotten my habit of peeling my potatoes with a paring knife, and my potato salad DOES NOT get served unless there is a layer of sliced egg and paprika on top! Maybe I am a southern girl! All I know is that I get requests at family get-togethers for my potato salad. 😊

Love the spoon idea for the egg. Another tip to crack a boiled egg effortlessly is add a little olive oil to the water when boiling. After it's done and you crack it, roll it in your hands a quick second and the shell practically falls off!

I totally agree with you on the eggs. The eggs are what make the difference between good and bad potato salad and the paprika makes it look pretty. I think it always tastes better after it sits in the fridge for a few days, same with spaghetti PS---red or yellow potatoes are more firm after boiling as you have to be way more careful with the russets getting too soft
I'm Southern but not Black. My mom raised us on good old fashioned Southern cooking! Fried chicken, sweet tea, fried okra, creamed corn off the cob, etc. Mom's potato salad made almost exactly like yours, with chunks of potato-cooled, even with the boiled eggs, and a touch of mustard which most people leave out, oh yeah and sweet salad cubes! Yummy! Love your video! And my mom would add very tiny diced celery. That was her thing! 🙂

Duke's is key. One of my relatives brought potato salad to the holiday lunch and she didn't use Duke's.... that was a sad bowl and no one wanted any of it. She learned her lesson that day.
I grew up on the west side of the country where we have Best Foods, then I moved to Alabama and discovered Hellmans. OOOOOOOOO it is the best mayo ever. The only place we can find it on the west coast is at Jimmy Johns (yuck)

Harold Coleman can confirm! Was told that by a young black woman while I was working in a Waffle House in 2000. It meant no harm. My dad had brought some food I had cooked earlier in the day and while I don’t remember what it was, she asked me what I would know as a white woman about soul food. I said girl, although I was raised in Germany, I was raised by southern parents and they grew up on soul food! She said I had good parents. Of course I thanked her for the compliment. It was very nice of her!

I'm from the Caribbean. We use Hellman's, onions (red and green) bell peppers for a nice presentation. I also love it when the eggs are peeled to have that smooth look. Makes for a better presentation.

Problem is that my spirit likes to randomly get lost occasionally on the cooking path. Hence ruining white bread in a bread machine once. Yet years before successfully making homemade sourdough rounds.
In all my years of cooking I had never cut a boiled egg shell and all into then scoop the egg. I was so intrigued by this I had to make the potato salad right now! I grew up on the west side of the country where we have Best Foods, then I moved to Alabama and discovered Hellmans. OOOOOOOOO it is the best mayo ever. The only place we can find it on the west coast is at Jimmy Johns (yuck)

Harold Coleman can confirm! Was told that by a young black woman while I was working in a Waffle House in 2000. It meant no harm. My dad had brought some food I had cooked earlier in the day and while I don’t remember what it was, she asked me what I would know as a white woman about soul food. I said girl, although I was raised in Germany, I was raised by southern parents and they grew up on soul food! She said I had good parents. Of course I thanked her for the compliment. It was very nice of her!

I'm from the Caribbean. We use Hellman's, onions (red and green) bell peppers for a nice presentation. I also love it when the eggs are peeled to have that smooth look. Makes for a better presentation.

Welcome to the club..I chop my pre boiled potatoes and eggs..if you want yellow yokes, boil potatoes for about 10 mins..turn off stove and put lid on eggs let sit for a bit

My great grandmother used pickle relish ,onion and celery. She never used sugar. She was from Ozark Alabama. I can always tell georgia potato salad because its sweet.
