I live in the US and have not been able to find a pumpkin with the rich, creamy taste of our calabaza. So I've settled for canned pumpkin...not really a fan. Made this for my mom for her birthday with a few changes. My husband has to be lactose free so I switched up every dairy product for coconut milk and used a lactose free cream cheese. It came out so tasty.
@@JeffandJosPuertoRicanKitchen you can actually find sweetened condensed coconut milk and evaporated coconut milk so there’s those two and Green Valley makes a really decent lactose free cream cheese. Switching out the milk products with coconut really brought out the coconut flavor. I think I prefer the flan de queso y coco over just a flan de queso.

Deletha Urbina I am so sorry about that. We baked it at 325. Edit: we actually baked it at 300, I apologize for this but you can bake it at 325, just check it after about 75 minutes.

I was wondering if you could give a recipe for flan de coco. Is it the same one as flan de queso but using coconut milk instead of evaporated milk? Or do I need to do something else? Hola! For flan de coco - you would use only half the cream cheese and then use coconut milk as you mentioned. I’ve seen some people that put shredded coconut on top too.
Great point - do not use the whole milk and instead add the coconut milk, also you can substitute the vanilla extract with coconut extract. Now the question is how much coconut milk - I would start with about 1/2 Can of coconut milk and taste it. A great trick is to add the ingredients to the blender, except the eggs, and mix and taste the flavor - see if it is has enough coconut flavor for your taste. You can add more coconut milk if you think it’s needed but I would not add more than a Can of coconut milk.
Jeff/Jo, my Mom used to make "funche" back in the 50s and 60s.... could you publish a Funche recipe? I remember Mom used to make it with cornmeal and beans. That's the only two ingredients I remember...

I did step by step what you did with a flouted 10am inch pan cooked for 90 minutes at 300 and when I cut into it. The flan was still partially raw any idea what I could have done wrong ?
Hi there! When you say partially uncooked. What do you mean? The flan will be creamy inside. However, if it was still too soft then I would recommend cooking it for longer next time or instead bring up the temperature up to 325.

Hey! If you don't have vanilla extract, it is ok to omit that. It won't change the flavor much or the texture at all. You can also try a different flavor extract like almond or coconut, if you have those.
Thanks for the question Scarlata! I generally don't like to cover my flan because it traps the steam in the pan and it can drip water back on to the flan. As for the 4 eggs, you can do that, the flan just won't be as solid, because there is less protein to hold it together. Good luck!

Every time I bake this recipe it comes out a disaster. Do not bake at 300 degrees for 90 minutes. It will be liquid. I’m so freaking frustrated. Edit: i just read one of y’all’s responses to a question and I cannot believe y’all did not correct the recipe in the video. Y’all are terrible.
I am sorry that you are frustrated with the recipe. Let’s start with the fact that our response to that one comment was a mistake - so apologies about that also, I will correct. We do bake the flan at 300 not 325. Now, I’m happy to troubleshoot with you if you want - what size pan are you using? If it’s deeper than what we used it will take longer. Also, not all ovens are the same, so if your oven runs low, you may need to increase the temperature.

Hey! If you don't have vanilla extract, it is ok to omit that. It won't change the flavor much or the texture at all. You can also try a different flavor extract like almond or coconut, if you have those.
Can i cover the flan with aluminum foil? I’ve seen people do that but idk the reason for it??
And what would happen if i only put 4 eggs???
Thanks for the question Scarlata! I generally don't like to cover my flan because it traps the steam in the pan and it can drip water back on to the flan. As for the 4 eggs, you can do that, the flan just won't be as solid, because there is less protein to hold it together. Good luck!

You can certainly do that. Check it after 1 hr since it will cook faster.

Jeff and Jo's Puerto Rican Kitchen DO NOT bake at 300. It will come out a raw mess. I’ve just had mine at 300 for an hour and a half and it’s still raw.

90 minutes at 300 degrees. You can bake it at 325 if you prefer, would start checking it at 75 minutes or so.

Every time I bake this recipe it comes out a disaster. Do not bake at 300 degrees for 90 minutes. It will be liquid. I’m so freaking frustrated.
Edit: i just read one of y’all’s responses to a question and I cannot believe y’all did not correct the recipe in the video. Y’all are terrible.
I am sorry that you are frustrated with the recipe. Let’s start with the fact that our response to that one comment was a mistake - so apologies about that also, I will correct. We do bake the flan at 300 not 325. Now, I’m happy to troubleshoot with you if you want - what size pan are you using? If it’s deeper than what we used it will take longer. Also, not all ovens are the same, so if your oven runs low, you may need to increase the temperature.
