I’m pretty new to baking and this recipe was amazing. One small thing that did cause me to waste though was the fact that creating the caramel requires you to not use a non stick pan. I didn’t know that , and I tried twice before switching to stainless steel and fixing my mistake. Just a heads up for anyone who was wondering why their caramel was crystallizing before it browned

Hello from Puerto Rico! My grandma makes flan and uses pretty much the same ingredients but adds 1/2 cup of sugar and puts everything in the blender. She's also never used the oven, it's always done in the stove. My grandma loves to watch you cook and we like to sit down, watch your videos and take notes. Thank you for your recipes!

@Katia Otero Yes, we always do it on the stovetop, a Bain- Marie to be exact. I use only 4 ounces of cream cheese and 3-4 eggs, depending on their size. It comes out exactly like this one. I sometimes omit the cream cheese altogether. There are so many ways to tweak this recipe to your liking. Thank you for sharing your memories about your grandma with us. I just love when our grandmothers share and teach us their cooking recipes and techniques. Much love to your abuelita.

Even pre-ordered the cookbook as a way of support, even when I could easily just watch the videos. Started out several years ago because I wanted cheesecake and figured I could make it myself. Now, I bake a ton of desserts. Just wanted to thank you for the easy step by step directions as I prepare this recipe for tomorrow's Super Bowl game. Got my go to cheesecake done and now it's the cheese flan followed by the Hawaiian butter mochi cake.

I really love this flan, it’s always a hit whenever I make it. I think the only tricky part for some would be the caramel, a part from that, it’s the easiest desert to make and probably the fastest one to be eaten! I actually just put all of the ingredients in the blender, if it’s lumpy I strain it.

Love watching your videos! This is exactly how I make my flan. Would like to add that it's very important to take it out of the oven while it's still a little jiggly in the center, or else it will overcook, the texture changes, it's not as creamy. And the flan comes out with a lot of little holes on the edges, classic tale of an overcooked custard. Thanks John!

I made this for my husband’s mom as a birthday treat and she loved it. I substituted coconut evaporated milk to give it an extra flavor note and it was delicious. Had to cook it for over an hour but I think that’s just an issue with my oven. Still, it’s a good idea to check on it so it’s not too jiggly when it comes out. Paired well with fresh raspberries. Oh, the best tip: DEFINITELY strain the mixture as you pour it into the pan - I was shocked how many lumps there were! Thank you!

Also, fun idea for rice pudding. A few weeks ago, I had some leftover jasmine rice and a can of coconut milk. I added just a bit of sugar and let it all cook together. It was quite possibly the easiest and tastiest rice pudding I have ever had. And it's super adaptable. We made more with regular milk and cocoa powder which was also amazing. The jasmine rice is so light and floral.

If anyone is thinking of trying this, do it. This flan is so good.
Smooth and creamy and just sweet enough. It was decadent and even my boyfriend that hates flan loved this one! I will say not to start it at night unless you like being up until 3 AM 😂
I didn’t have a baking dish/roast pan large enough to fit my cake pan into so I separated the mix into some smaller casserole dishes and it was still perfect!
I was so worried I had put too much air in it and that it would be full of holes but nope! I did tap it on the counter a LOT though
Definitely the best flan I’ve ever had, and even more so the best flan I’ve ever made!
Also a bonus is that it uses the whole egg so I didn’t have to figure out what to do with a bunch of egg whites

The family I cook for raved over this flan and requested another, despite a substitution I made: I used Neufchatel rather than cream cheese. Hello! I am from Leon, Guanajuato Mexico. However, I live in Nebraska now! GO HUSKERS! LOL! We love adding liquor to deserts. I added some liquor and some pure organic vanilla extract (which contains alcohol as an ingredient I noticed) to your recipe, and it was delicious!! I called it "Flan Envinado!" It was a hit with my family members!

If you add two tablespoons of corn syrup to the sugar it won't crystallize. Also you can make many different flans by replacing some of the milk with fruit juices. Cream cheese is great even pumpkin flan, with pumpkin pulp. Just experiment. I've been doing it for 50 years.

  • @Pita33
