Tama, made even better if halong lard or animal fat ung oil na pinang deep fry... sa sa actual na pagluluto sa Dagupan theyve been using the same oil all day sa mga orders kaya yan din i guess sikreto nila dyan...

Pagkahango gumamit po ng strainer to remove excess oil and let it sit for atleast a minute, bago ilagay sa plato.. sa mag nag titinda gumagamit din po sila ng strainer to remove oil,. Not sure how long before they transfer sa plate

Bakit lahat na recipe nang pigar pigar deep fried. Original is not deep fried. Ang nauna nagluluto nang pigar pigar yong nasa street, baba nang famous building Modesta in Dagupan city. Early 80’s after kami mag bar noong college bili kami karne nang bahong katay na baka.. dalhin namin sa kalye may magluluto sa gilid gilid asin, paminta at sibuyas lang.. tapos bili na kami kanin sa nagluluto yong ang business nila.
Mas masarap pa rin ang pigar pigar sa early 80's. Bili ng Karne ng baka, small intestines, liver at mga litid litid, chopped into small cubes, lagyan lang ng asin at walang hugasan, diretso sa kumukulong mantika, lagyan ng maraming chopped na sibuyas, ilang minutos lang at hanguin na kaagad. Kainin ng mainit sa kanin. Yan ang rhe best na pigar pigar. Hindi ung hinihiwa ng manipis ang karne at di naman niluluto na parang beef steak

hindi kailangan. manipis dapat ang pagkakahiwa para saglit lang lulutin.. kapag pinatagal. ang pagprito o pagluluto mas magiging tough yung meat
