There was a time when binabawal ang carabao meat because these beloved domesticated " workhorse " of an animal was the main helper for a farmer plowing the rice field. Now that Filipinos 100% imports its rice staple , the water buffalo has become redundant. In Italy they value the carabao or buffalo that it's illegal to butcher it unless it has outlived its usefulness. Its milk is used to make Mozzarella cheese , Parmigiano Regiano or Parmesan cheese , which is highly regulated by the government . It is not Parmesan if not made of buffalo milk. The milk of buffalo is most delicious, high fat content and healthy , pastured eating grass , meats are low in cholesterol and taste delicious . They are not enclosed in industrialized American ranches fed antibiotics and hormones for fattening and bulking them up for larger heavier meat/weight. I only purchase mozzarella and parmesan cheese made of buffalo (carabao) milk from Italy because Italians love and treasure those animals . Why don't the Philippine government support the carabao dairy industry 😒?
Meron po dito sa nueva ecija , science city of muñoz, Philippine carabao center milka krem. All carabao milk cheese etc.
