Making and Dehydrating Jerky (ground Venison)

just take you through the steps i take in making Jerky from my Venison but may also be done the same with Beef
ingrediants for 4 pds of ground meat
-don't be afraid to mix it up and use your favourite spices or sauces
-1tbsp Paprika
-2 to 50 tbsp. Sriracha or your favourite hot sauce
-1tbsp -sea salt
-1tbsp Garlic powder
-1tsp or alittle more liquid smoke
-1-2 tbsp. Teriyaki sauce
-1/2 tsp Cayenne peppern
-have fun

I have a friend I met in the Marines from northern Michigan and he gave me almost the same exact recipe and it’s my favorite.
My new Cosori dehydrator came in yesterday and I have a hand extruder for jerky. Remember watching you make jerky years ago and went back and looked you up. Great video and recipe. Need to tell Joe to do some more camp cooking video's like his chili. Will look to see if you have more coking videos.

enjoyed the video, thanks. I use the nesco dehydrator with same trays. I taped a pill bottle on the table and layed the tray over that and grandaughter would spin the tray as I squeezed out the Jerky. speeds up that step a bit.

We always use the store bought seasoning with a curing packet. It's nice to see I could do it without that cost and added sodium/nitrates. Siracha, nice idea!

I've always used muscle meat sliced thin for jerky but I'm going to give it a try. I got 2 pounds of ground moose marinating in the fridge for the night. It'll go in the dehydrator in the morning.
I'll let you know how it turns out.

Nice Doug. I've never used the jerky gun, I've always just sliced it. I think I may pick one up just for consistency's sake. I like that spice blend as well.

Looked good Doug, maybe I'll have to try the ground beef style, I usually cut my beef thing but it can be hard to tear when you eat it, but that makes people eat it not as fast haha my marinade is simple Salt: I use Soya Sauce. Sweet: I use Honey garlic sauce and Brown sugar. Heat: I use red chilli flakes. Ive never had a complaint. I have a video on my channel. I'll have to try your way with that gun thing though, thanks for sharing ! looking forward to your camping video to come.

I like ground better I find strips have dry spots and make it a real P.I.T.A to chew.
Shared so I wont forget when I go to do a batch before the spring trip. I usually do a honey garlic and soak it in Hot Sauce lol.

What, no way! I was doing a YT search for aurora trout and from what I can tell, he's the only guy ever to catch one or have a video of one! That's pretty amazing. Small world too. I may try to rival his catch though as I was planning to track down an aurora! Anything for a trout-venture. Have fun on your winter trip...if you haven't already left! Looking forward to the video.

I am going to try to make this hamburger version. Thanks for sharing the recipe. I want to add Chinese sweet hot sauce. I'm concerned that the sugar will make the jerky spoil. What is your opinion? One other thing, you were discussing what one can put in the jerky for added flavor. What about cheese and veggies? Also, where did you get your jerky cannon?

Good video. I make a lot of venison jerky but tell my butcher to not put any fat in my burger and that stops from having to wipe. Your right tho my kids and grand kids eat it up.
Doug, I just found that Jerky can be made in a toaster oven in about 1.5 hours from TosTinMan on You tube, I just thought that I'd give you a heads-up.
does the meat meat have to be boiled,cooked,or is that the purpose of the marinade.Or does the dehydrator cook iy

Sweet recipe! Doubt that I'll be able to find a jerky gun here in the Netherlands but I'll find a way!
Any substitutes to the liquid smoke? Don't think I'll find that here either lol.

don't know about the smoke but you can Roll meat with a rolling pin between wax paper and just make strips with a pizza cutter

Hey Doug! I know this is an old video, but I like your channel and I'm just getting into dehydrated food eg, jerky, veggies and fruits(: I have a couple questions to ask and I hope you reply or even get notifications on old bids? But here we go! First, could i use pink Himalayan rock salt instead of sea salt? And secondly, does the meat have to be cooked prior to dehydrating or does the dehydrator actually cook the meat as it goes?

We have actually switched salts ourselves and it makes no difference.The dehydrator cooks the meat. if you were to use cooked meat it would be inedible when done
@@dougLinker awesome, good to know(: and also with the hickory smoke flavouring, I have never seen something like that in Australia, but we do have hickory flavoured BBQ steak sauce, do you reckon this would work as it has onion powder and spices also?

I dont understand why Jerky is so popular in the US I tried Wild West Jerky here in the UK and binned it after one piece. Are there brands I should try or flavours that are more... enjoyable?
