    I made this recipe and it was delicious. The cook time worked for my chicken and just to be safe, I used an instant read thermometer. It was completely cooked, tender, and juicy. I've never cooked a chicken this way but I will definitely do it again. I also made gravy with the leftover broth, which turned out phenomenal. Happy family all around.

    This cook is very traditional Cantonese style. My mom and grandmother also cook chicken in this way. I always love the baby onion and ginger source. For Chinese, this chicken has been fully cook. They don't wait the heat more until the bone is cooked, otherwise the meat will be overcooked, and taste hard. So my mom always use chop stick inserting into the thigh, and check one or two times to see if the meat easily separate from the bone. This trick is very hard to master. Cantonese cook is very time consuming and need a lot of patience.

    This is what chicken always look like when you go the fanciest Cantonese restaurant.
    Its not a bit raw. The meat is fully cooked. Its just not dried out and hardened like westerners are used to.

    Thank you for this video! It reminded me of my family's favorite Chinese restaurant in Rio de Janeiro back in the 80's, and inspired me to try at home. I cooked it in a normal pot and it came out delicious! I would have never tried just by reading the recipe. Seeing grandma cooking and cutting the chicken made it look much simpler, as it actually is.

    The best way to make the scallion/ginger sauce is by heating up the oil in a pan first until it starts to smoke and then pouring it over the mixture. The hot oil will change the flavor and texture of the mixture and also cook it slightly and make it more aromatic.

      not really, not for this kind of chicken.We use the method for the chili/Sichuan pepper powder.But never use the almost smoked hot oil cause will that scorch and destroy the taste.
      Remember this way is more like to keep the original taste.

      I make it with hot oil all the time. Never have I ever scorched the mixture. I also do it Cantonese-style, so I'm using salt only (no soy sauce). Our version of soy sauce chicken is actually using sweetened, thickened dark soy sauce smothered over the chicken and not using the scallion/ginger mixture. We use that for plain chicken that has no seasoning.

    90% debating whether the chicken was raw or not 😂😂
    I'm just here appreciating grandma 😂 Whoever thinks its raw you either haven't had any of this or just wants a fried chicken 😂 We eat tinola in our country which I assume those who say this is raw haven't tasted tinola ever😂 and the texture is similar to this, looks raw but tasty. You better chill stop being so know it all people 😂

    广东人都说鸡生鸭熟,就是说白切鸡不能煮太熟了,这样吃才香。 Cantonese like “medium well chicken, well done duck”. The best cooking result for chicken is having white meat and pink bone.

    totally awesome! yummy as hell. exactly the way my mum/grandma would have made it! and to those who feel its undercook, give it another min or 2, but you'll lose quite alot of moisture from that extra cooking. and lets not debate on if its raw, but rather the way it is cooked and how homely this is! Guys! grandma's cooking somehow never goes wrong and i would trust her with a chicken like this.

      I cook, especially chicken, everyday to feed my family and that above chicken looks a bit raw. My grandmother used to boil cook chicken (hen actually for broth) and it never looked raw.

    Thank you for making this video and sharing your wisdom. To the wannabe cooks: pasteurization is a function of temperature and time. If you can hold the chicken at a temp of 136F for 63.3min, it will be pasteurized. 145F for 8.5min. Blood changing color is also not just a function of temp.
    What is shown in this video is a cooking procedure that can consistently reach pasteurization conditions.

    The blood and slight pinkness came from the bone and sometimes this happens if it’s been in the fridge for some time. It is not raw. Steamed chicken is eaten like this most of the time. We still alive.

    Perfect cooked delicious chicken, the golden color i think its native chicken. no more red blood on the meat after slicing means its fully cooked.     The offal put in with the chicken was gizzard and liver I believe. Here in Nigeria, we use even the turkey gizzard as meat in all kinds of recipes

    Trust me. A canto grandma will never let their kids eat chicken raw. They are more cautious than us. That chicken is just good.

      BULLSHIT!!! The chicken is slightly pink at the thigh joint, NOT RAW, Chinese chefs have spent many years trying to perfect a reliable method to attain that perfection. My own mother, a great grandmother would disown her daughter in law if she overcooked the chicken.

    You know why there is still raw blood in the bones/near the bones? It's because they didn't cut off the head and neck of the chicken properly. The chicken head is not supposed to be still intact with the body when you want to cook it to allow all the (dirty) blood to flow out of the body, thus preventing the chicken from being undercooked inside and/or contaminated with the germs and bacteria inside the blood.
    So, if you guys want to cook this recipe, make sure the head of the chicken is cut off properly and thoroughly and being thrown away, not cooked together with its flesh and bones.

      A bit of blood in the bones means the meat is cooked perfectly, not overdone.

      With chinese cooking, it is rare not to have the head, cos they sell the entire chicken this way, quite freshly produced. Whereas this is not the done thing in the UK. You can cook the bones with the blood. Most people try and blanche it first. But I guess, this method is also okay, but you got to be careful to pick away the meat from the bones.
