I made this recipe and it was delicious. The cook time worked for my chicken and just to be safe, I used an instant read thermometer. It was completely cooked, tender, and juicy. I've never cooked a chicken this way but I will definitely do it again. I also made gravy with the leftover broth, which turned out phenomenal. Happy family all around.

Thank you for this video! It reminded me of my family's favorite Chinese restaurant in Rio de Janeiro back in the 80's, and inspired me to try at home. I cooked it in a normal pot and it came out delicious! I would have never tried just by reading the recipe. Seeing grandma cooking and cutting the chicken made it look much simpler, as it actually is.
This cook is very traditional Cantonese style. My mom and grandmother also cook chicken in this way. I always love the baby onion and ginger source. For Chinese, this chicken has been fully cook. They don't wait the heat more until the bone is cooked, otherwise the meat will be overcooked, and taste hard. So my mom always use chop stick inserting into the thigh, and check one or two times to see if the meat easily separate from the bone. This trick is very hard to master. Cantonese cook is very time consuming and need a lot of patience.
Drooling... This is my mom's favorite way to have chicken! I never knew how to make it for her, but I will try this grandma's method. Thanks for sharing!
The best way to make the scallion/ginger sauce is by heating up the oil in a pan first until it starts to smoke and then pouring it over the mixture. The hot oil will change the flavor and texture of the mixture and also cook it slightly and make it more aromatic.
not really, not for this kind of chicken.We use the method for the chili/Sichuan pepper powder.But never use the almost smoked hot oil cause will that scorch and destroy the taste. Remember this way is more like to keep the original taste.
I make it with hot oil all the time. Never have I ever scorched the mixture. I also do it Cantonese-style, so I'm using salt only (no soy sauce). Our version of soy sauce chicken is actually using sweetened, thickened dark soy sauce smothered over the chicken and not using the scallion/ginger mixture. We use that for plain chicken that has no seasoning.
Perfect cooked delicious chicken, the golden color i think its native chicken. no more red blood on the meat after slicing means its fully cooked. Great job Granny for your hard work .this is old ways of sincere love cooking for the loved one's. The cooking process really need patience. Im so grateful that i now know this cooking tactics. If you can hold the chicken at a temp of 136F for 63.3min, it will be pasteurized. 145F for 8.5min. Blood changing color is also not just a function of temp. What is shown in this video is a cooking procedure that can consistently reach pasteurization conditions.
This is what chicken always look like when you go the fanciest Cantonese restaurant. Its not a bit raw. The meat is fully cooked. Its just not dried out and hardened like westerners are used to.
