    哈哈 ! Laugh die me ! 從未聽過或食個啲「白切雞」係咁樣做法...! 白切雞第一係選雞, 第二係靠浸熟(絕對唔係蒸熟), 第三(靈魂所在)係薑茸, 第四雞熟咗之後需要浸冰冷水令雞皮爽脆 白切雞係適宜微暖甚至凍食 !

    我們這裏的白斬雞是水煮的 好像只要抹鹽後再水煮就可

      不太一樣, 影片使用的是大陸的三黃雞 具有肉雞的軟嫩也有走地雞的香味 也不貴 台灣沒有這種品種 基本都是土雞
      廣東人吃的雞肉 是要鮮香滑嫩的, 土雞 就非常不適合且肉硬 所以就有不同的料理方式。 三黃雞水煮也可以 但不能長期煮 只能泡熟 需要一定的技巧!

    After you Wash Rice, keep that rice water and use it wash chicken and meat will clean very well, try it you may like it way.

    I love white chicken super super, however, when i buy from stores, there's always fresh blood inside.
    One time i was in Hongkong hospital cafeteria, served this dish, meat was thick, succulent, soft. Made me extremely happy. Now i know it is steamed, washed in beer, washed in flour ...

    very nice presentation & loved the final dish. just one suggestion - at the end if you would cut the meat from the bone by hand or fork to let the viewer get the feel of tenderness of the meat.

      Ginger is a very common & essential ingredient to Chinese & Asian dishes, used mainly for flavouring. Don't need to eat the ginger slices....sorry, don't know any substitute! Guess you could leave out the ginger from the sauce/dressing, but it wouldn't taste as good.
