It is an traditional and ancient process of curing when freezing meet was not yet available. All cultures, have different ways or curing meat to avoid spoilage. If you have a lot of flies and insects or you live in the city, this is not recommended, unless you have some sort of screen or curing chamber.
I do not have 3 days to prepare one dish. My 3-hour recipe is to marinate legs/thighs/wings in a similar sauce for one hour. Then wrap them in aluminum foil sheets with some of the sauce and bake at 350F for one hour. They usually turn out to be tender and tasty. And the juice is great on rice or noodle.
@@nichelle-marquese743 all do was soak chicken wings or legs in soy sauce for a couple days. I use a baggie and push them around once or twice a day to be sure they are coated evenly. I've even forgot them another day or two and they turn out fine. I bake them in the oven and eat them. My kids love them.

I did this with chicken cutlets and then sliced them into cubes after a 2 day marinade .. it was marvelous .. I use them in a beef and broccoli recipe .. they were like cubes of butter , I dunno how else to describe them ..
I was thinking the same thing. I can make a pretty good plate of chicken in a few hours by dry brining, so after multiple days the chicken had better be the best ever.
I over the course of last week made this dish, I dried it in my refrigerator and just steamed the chicken legs. it was not as salty as I though it would be. The marinade gave the chicken a round and mellow flavor, steaming it gave a great texture to both the skin and the meat. Well done!

I was thinking maybe I'd be able to impart even more flavor to the meat by drying out the spices, and then pan roasting them before grinding them into powder before mixing them into the soy sauce marinade.
The peppers used looked just like thai bird peppers. I've used the soy sauce method but I substitute the spices with Chinese 5 spice powder that has most all these ingredients. Sometimes I'll grill it or just have it with some jasmine rice. But with that many peppers I must be as Hot as heck!
