So we all learned how to do Christmas candies as children. Can’t make candy anymore because of arthritis but still make cookies, cakes, and pies.

Mom made divinity without air conditioner, no thermometer..As soon as any kitchen appliance came out, Dad would go out and buy whatever it was...Mom was a fantastic cook and baker, who gave demonstrations for women who wanted to advance their skills.
I've heard with candy sometimes if you cook it like a few degrees above the recommended temperature that can help when it's humid out. I don't remember exactly how far above the particular stage it needs to be but it is a trick I find that works for most candies.

The first golden rule of divinity is to prewash all your utensils, cookware and mixing bowl in hot soapy water (use a clean dish rag). One tiny spot of grease can make your candy fail to set up. I’ve been making and selling my divinity for almost fifty years. A Taylor candy thermometer is the best and is easiest to attach to your boiler and is not expensive.

My grandmother said no matter what don't double the recipe....do one batch at at time. Did I listen the first time? No so I had to put it in the freezer just to get it to make a taffy like consistency. Now I do ONE BATCH AT A TIME!

I didn’t realize how hard it was to make. This video was bitter sweet to watch. I left home for the military after high school, moved far away and rarely saw her after that. Unfortunately little did we know she would be diagnosed with early onset Alzheimer’s and pass away a few years later. I had completely forgotten divinity until I stumbled across your video. I remembered the sweet smell and taste as you were spooning it out. I don’t have a stand mixer but if my mom could make it with a hand mixer I’m willing to give it a shot.
I make divinity for the grandkids and I tell them it’s snowman ⛄️ poop and the love it and I have also used food colorings and they are absolutely beautiful on a Christmas Family table
My mother used to add food coloring and other flavorings besides just vanilla. She always made a box full for my grandfather for Christmas. One of my favorite candies as a child..

Hi! Welcome to my channel! Yes!! You can definitely add dried cherries to your Divinity. Just add them at the end and stir them in. And, almond extract is excellent with the cherries❤️

I have never made a double batch. I always make two separate batches. You could probably do that if you have a commercial standing mixer and another set of hands helping you. Merry Christmas 🎄❤️🎄

There's two types of dried egg whites is the meringue powder with Charity has sugar in it and then there's just plain dried egg whites if I haven't seen on any store shelves in a long time. Both will whip up just like fresh egg whites.

I attempted your recipe, while I had success with getting my egg whites to get to stiff peaks, I failed in the end result. It ended up as a sticky taffy mess. Not sure what I did wrong. 🤦🏼♀️🥴😞
Don't give up. I've had that happen as well. It sounds like it didn't spend enough time in the mixer. Don't stop mixing until the Divinity holds its shape. It takes anywhere from 5 to 10 minutes and sometimes longer. Give it another try. It's so worth it!!!

It's too sticky. It dries really fast. And, the little bit of water you get from dipping the spoons helps so much❤️
