I work in a nursing home and one of my patient was saying that his mom used to make this. It's one of his favorite i'm going to try to make it for him.

Thank you for this video! I was a little thrown off when you said you have to have a stand mixer or it can’t be done though. People have been making this candy for well over a hundred years without even electricity much less an electric mixer.
Yep! My mother-in-laws handwritten recipe says to "cook in a kettle" and "put it over the fire." One of the tests for doneness of the syrup is to drop some in cold water to see if a soft ball forms.
I'm a 49 year old man and never had a good mixer until my mom got me a Hauswirt recently. Divinity turned out no so great and I don't understand why. The internet said to make it in low humidity (40% or less), which I did it's 29-30% now. You said to beat 2 egg whites and in the video showed what they should look like. It took 8 minutes of mixing to get there but mine looked exactly the same. And I boiled the sugar stuff until it was 260 degrees and poured it in slowly using the paddle attachment like you said and to beat it like that for 2 minutes. I did 3 and it was still super runny so I spooned it out onto the parchment paper. The consistency didn't look quite as smooth as I thought it would be but it tastes right.
Divinity is absolutely my favorite of fudges, but I prefer it without any nuts or anything in it. Thank you for all of the hints. I plan to buy a candy thermometer and some corn syrup, then I will make it--or try. I have such fond memories of making divinity when I was a little girl (which meant that my main job was trying it) with my wonderful aunt, whom I adore, she's a best friend. I'm from Canada as she is, but she now lives in Southern USA where she has lived for 50 years with her family.
Here in the UK or Europe this is known as nougat. They can make it with pistachios, orange peel and dried fruit. So delicious.

@@verybiGirl I found this explanation on Google: Divinity is cooked to the hard-ball stage, while nougat is cooked to the hard-crack stage, which makes nougat denser and chewier.
Consistency
Divinity can be creamy and fluffy, while nougat can range from dense and chewy to light and fluffy. Nougat can also be cooked to different consistencies, including firm and sliceable.
Oh great news for the egg yolks is to make lemon curd. When I make it I usually use six eggs of which I use for a whole eggs into yolks but sometimes when I’ve made recipes that don’t require the oats are used to the whole eggs and all of the rest yolks. There’s nothing better than have any lemon curd that you’ve made on hand it truly is like divinity food of the gods.

Thanks for making this video, I can probably do this. My Mother made divinity when I was a kid and she did it all by hand, we did not have electricity. I recall my sister, the pourer, hated helping but it was so light and fluffy when done. I realize now how much work it was.

I always make Spritz cookies when I make Davinity! My Spritz recipe uses only egg yolks.
You can make it with a handheld mixer my grandma did it many times

Gramps used to make this by hand when he was 80. It looks similar but I wonder if his divinity was a different recipe. The way he had it hold its shape is by freezing it firm.

You can make divinity with a hand mixer , but it helps if your mixer comes with a stand,
Did attempt making the divinity. It came out chalky. Wasn’t too bad. Actually surprised that it turned out edible lol. I’m def not a cook. But your vid inspired me.

Divinity was made long before stand mixers were available to the masses.

I bet you were looking at Celsius, but it’s 260 Fahrenheit.

The egg whites have to be stiff oeaks before you add the syrup

I saw one divinity recipe that had the ingredient of vinegar, a teaspoon I believe. Do you know anything about using that ingredients why you would use it?
Helps keep the structure of the meringue. You can use cream of tarter instead.
It helps the protein make a fluffy, glossy meringue. You can also wipe the inside of your bowl with it or dunk the whisk before you start.

Probably either needed to cook it just a smidge longer (some candy thermometers need to be calibrated) or beat a bit longer.
