  • Made in humid weather it still turned out good.
    Here's the recipe:
    1 1/2 cups toasted pecans
    2 2/3 cups sugar
    2/3 cup light corn syrup
    1/2 cup water (use 1 tablespoon less in humid weather)
    dash of salt
    2 large egg whites, beaten to soft peak stage
    1 teaspoon vanilla extract
    Instructions on video.
    Options: add candied cherries, pineapple, etc.

    Just found out about Phyllis's passing. Prayers for comfort to her family. She taught me how to cook after my wife's passing. Thanks for the memories.

    I think of you often Ms Phyllis. I find myself going back and watching the older videos you had such a soothing nature and kind soul.. you would be proud of your son fulfilling your wishes with your channel. You are missed but your legacy lives on.. Making this today as I start to make my Christmas candy.

    My mother and older sister tried to make divinity a few times years ago but it always ended up really hard. What a wonderful mother Phyllis must have been for many reasons, her cooking just being one of them.

    I've just watched the video saying that Phyllis passed away a few days ago. So sad 😥. I made this quite a while ago, following her recipe and it was absolutely delicious. Such a kind hearted lady. I'll miss her videos x

    Mr Buckley’s Divinity is a real process! I’m sure you will be back to making it in no time! Love the tip of brushing water along the pan side to avoid the sugar crystals. Thank you , Mr Buckey, for pulling this one up again. God bless you and Phyllis as she progresses in health.

    Kitchen Aid stand mixers are the only ones that can take the punishment of making divinity without burning out the motor. My grandma used hers many years ago and now I use mine for making this delicious candy!! My family loves it!! Its a Christmas tradition for our family. I am originally from CA and it was very popular out there too!!

    It’s holiday time again and I come to your channel to watch the videos for sweets that I make. I really love listening to you and all the tips you give along with instructions. It makes me feel loved, like I’m in the kitchen with my gramma who is no longer here. She loved to cook and bake and she was from Mobile Alabama so I had plenty of southern delights growing up.
    I know you are no longer here with us but I want you to know that you and your delicious recipes live on through me and my family. I have watched your videos for years and years and even though I didn’t know you personally, I feel your loss

      Jan white I already have fallen in Love with these two precious souls. I’m also now in my sixties and I feel as though God has richly blessed me with finding this channel. I just wanted to make a connection... I’m going to make this as well and soon. Maybe we will meet back and compare notes. I am not a candy maker but Ms Phyllis is so precious in the way she encourages, I might be able to do it. God bless you and I pray yours turns out famously.

    FYI- if you spray your glass measuring cup with a little non-stick spray, it really helps to get sticky substances (honey, corn syrup, etc.) out of the cup.

    I used to help my mother make divinity , fudge , peanut brittle , i was only 8 yrs old ....we make up to about 20 batches or so ....we would make it on a rainy day or foggy wet day we found it to help make the divinity be moist ....it was a job just to stir by hand ...that all changed when the... KITCHEN AIDE MIXER.....was made it was a blessing...one thing i can say when it was Christmas time we would add food color it would look pretty with the WHITE , GREEN , YELLOW ,RED on the trays....one thing i can say i really don"t see many people string the candy until it formed soft peaks ...then we would spoon it out ..what a job

    the first video I saw of Phyllis was the old fashion fudge and then saw a video just with her I sit here and cried and cried, I really enjoyed her video and this is my 2nd, I will continue to watch her videos, RIP Phyllis Stokes.. I'm still crying and it was last night.. God Bless

    I will be making this in mr Buckys memory this Christmas ,as when I watched the video with mr Bucky moaning about Phyllis not having made it for a couple of years made my husband and I laugh out load and determined to have this year ,so here’s hoping it turns out well as being in the uk using cup measurements is a little daunting ,also saying a prayer for Phyllis my she receive the healing she needs 🙏🏽🇬🇧

    Hey Phyllis! This reminds me of my "Grandma Mary" (from Alabama) so much! She always made everyone in the family a care package every Christmas and I couldn't wait to get it!! She included all kinds of candy, cookies and the old fashion chex mix snack. Sooo good! She went to see the good lord about 24 years ago but seeing this video brings back so many great memories.     Walnuts make delicious divinity, as well. Really delicious. If it's a little humid they also help the divinity set up better too.

    Phyllis this brings back a hilarious memory of my chilldhood. My grandmother always loved peppermint. She grew it in her garden and she always had peppermint candies in her house and even carried a few in her purse. Well one day she decided to make peppermint divinity.
    My uncle Jim and I came to her house just after the divinity was ready and she offered us each a piece. Well Grandma was either getting forgetful or she liked the taste of peppermint far beyond that which any human being could normally tolerate because she used about four times the amount of peppermint oil the recipe required.
    I took one bite and my head felt like an old road on a hot day. I think every suture in my skull expanded. My brain felt like it was leaking out my ears. I looked over at my uncle Jim and his eyes were bulged and watery. His face was redder that the candy thermometer.
    " Mom what the bleep did you put in this divinity?"
    Oh, did I use too much peppermint oil.?"
    BOY, DID SHE!!!!!

    Ms Phyllis- you are amazing! My Granny (God rest her soul) taught me to make this- almost exactly like you! I don’t do it anymore (even during Xmas) because I’ve sworn off the sugar, but you’ve done it EXACTLY like she taught me. It absolutely brought tears to my eyes! Thank- You So Much!!!!

    Hi Phyllis. Thank you for your great instructions on how to make divinity. Both my grandmothers made it. Sadly, I never watched them while they were making it. My one grandmother sometimes used black walnuts in hers (very tasty). TFS. Toni in beautiful Colorado.

    Thanks so much for the this video. My Grandmother always made this at Christmas. I have never been a cook but my mother never would attempt this saying hers would never get hard. I wouldn't know why. Your video has made me want to try your recipe. I too make fudge to give for the holidays. This would be such a great gift also. I remember the taste when Granny made it. So good.

    I have got to try your divinity. I love this candy. I used to make it all the time. I actually won our County Fair Candy Division with my neighbor's recipe. I used walnuts. If you use them you have to stir them in at the last minute or it will turn the divinity dark. I will try your recipe VERY soon. I think you have become a house hold name here in Arkansas. Love your videos.

    Thank you for this video! I just made divinity for the first time and read multiple recipes and watched videos to prepare. Yours was the only one that I saw with the tip to put it in a Pyrex vs portioning out on a baking sheet. Genius! I did that and then used a piece of parchment to smooth it down. I decided to try cutting it before it dries to see if that would work and the knife went through the semi-set confection easily. We’ll see how that works out after it has dried 🤞 But thank you for your great tip and your wonderful voice and commentary. Extremely calming and enjoyable! Happy holidays!

    Hi Phyllis! I just wanted to tell you I love watching your videos. I am so happy to see these recipes for divinity and fudge, etc., from scratch. I am 40 years old and have 2 teenage daughters, and so appreciate the fact that you take the time to make these videos. I worry that these traditional recipes are going to be gone with my generation, and I really want to pass all of this on to my daughters. So thank you so much for teaching us how to make them!

    Excellent recipe, I live in Seattle and it is gonna rain, so I cooked mine to 160-165 also, on my egg whites, I added my salt to them ( Stabilizes the whites and added a pinch of sugar also ) when I poured the cooked syrup into the whites added vanilla they hardened up for me fast, 2-3 min tops, I poured into my greased pan and they were set up as soon as I was able to pour in and pat flat. I was able to cut almost IMM. Also I did not add nuts. I had no light corn syrup ( CoronaVirus Lockdown ) so I used rogers Golden syrup ( has more of a molasses taste to it, its made with Pure cane sugar ) Absolutely Yummy..
    These were so extra fluffy and melt in your mouth, I will never drop them again with spoons, I will always do it Phyllis's way "Brilliant" With the buttered glass pan came out easy, no sticking. Super easy recipe and Best Divinity I have ever made! Divinity is my all time favorite holiday candy and w/lockdown, I was just in the mood for a nice treat, and Boy was this recipe it.... I make them almost every year, but, I did not want to dig out a recipe, so I used yours. WOW!
    I have over 1000 hours of cake decorating and Chocolatiering and candy making classes and competitions under by belt and own a restaurant and I have to tell you all, this is a NO FAIL Divinity recipe. Hands down best I have ever had. Thank you Phyllis, I am a fan of yours and I just sub'd to you, so I can see what all you post. Awesome job!
    PS: Guys if you cook the Sugar hotter like I did, you will only have 2-3 min mixing time, including anything your adding in or coloring all of that, this sets up fast, if you cook it how Phyllis did, you will totally have more wiggle room...Just a FYI. I am thrilled with mine and how fast it set, but, I added nothing into mine. Super Fluffy yummy good...Thanks again

    Hi! I know this is quite an old video but I have a little tip. For sticky things like corn syrup an easy way to get it out is to spray the cup with cooking spray first, making sure to get up the sides too. It helps a lot!

I had never made divinity before so I give the credit for it turning out so well to you. I have tried lots of your recipes and they always turn out.     It's been years since I've heard of divinity fudge, I do have a recipe for it, but I think I like your recipe better. It was pretty popular in the 1950s - 60s. Looks luscious!!!!

    This was one of the few desserts that my Mama made when we were growing up. We all knew we were getting a wonderful treat when she would start making this candy! She called it "Seafoam Candy". Thank you for sharing this recipe; I can't wait to make this.

    Mouth watering, I am a little afraid, but you make it look easy. Agree about cutting squares. Better method ! Also wanting to see you make some GRAPENUT CUSTARD !!! I make it a couple times a year. Love it, too much ! Love your vlog !!

    I make my Divinity exactly the same way as you and have never worried about the weather being right because as you say it always turns out. Love your channel and watch you quite a lot. Bless you and Mr. Bucky for your morning devotions also; that is also something we do the same as you except we haven't started trying the Smoothies yet but will. God bless Southern cooks, the best in the world and you definitely are one of them.

    Thank you. I always wanted to make divinity but my mother convinced me it was too finicky. Now I feel that you have prepared we listeners well. I wonder if chopped up gummie candies would work. Guess Ill find out!
