Mrs. Phyllis, the energy you mainly get from rice. A trainer at a gym I went to in my forties, came over one night. He said he noticed that before I had completed my entire workout, I was slowing down. He told me to eat at least a cup of rice an hour before coming to the gym. It worked perfectly. I love rice pudding so am thankful you just taught me how to make it. 67 and still learning♥️♥️♥️

Definitely the rice and the sugar. All simple carbs will give you energy. Just be careful of the crash afterwards. Can't wait to make some of this.

I love to cook and bake for my family and unlike a lot of young people today both of my parents cooked for us and I paid attention. I now cook for my family and look forward to trying new recipes. Rice pudding is definitely on the top of my favorites list. By the way your video on Mr. Bucky wanting a Hardee's hamburger was hilarious and I enjoyed the banter. My son bought me a SunOven®️ and I've cooked everything from chili, stew to brownies in it. I'm up in Omaha Nebraska and we even cook in the middle of the winter! They say if you can see a shadow, you can cook. I admire that you built one! Oh and I love Rice Pudding!! Wonder if we could try quinoa instead of rice?? ♥️♥️♥️ Edit: I learned that if you drape a 100% cotton BLACK tea towel over what you're cooking in sun oven, it'll cook much faster. You don't need dark pans.

At the end of the 1st video on your website, YT fills up with squares of other similar videos but doesn't give the identity of whose video is listed in the 'Hollywood Squares' type of tiles of other videos. It did have, "How to Make Rice Pudding," and the first words that came out of my mouth were, "I bet that's Phyllis' video because if anybody would know how to make rice pudding, it's her!" And sure enough, I was right. :) These are things Grams, my great-aunties/great-great-aunties, & Mom have shown & taught me over the years but have become lost in the Fibro- & Lupus- fogginess of my brain. Thanks for the wonderful journey down memory lane.

I find the way you make Rice Pudding in the US to be odd, because here in the UK it's completely different. We use Pudding Rice, which is a short grain rice & it's super easy. Put the dry rice into a baking dish, add sugar, pour in milk, dot with butter, put in oven. It bakes to a lovely thick oozy consistency with a dark burnt sugar type of crust that tastes like toffee. That's how Mummy makes it, so that's how I make it.😂 Your recipe though is very interesting, You cook your rice in almost a custard mixture ... (eggs, sugar, milk IS custard), have you ever tried cooking it in a 'Bain Marie' if your Sun Oven provides a gentler heat to make your best one ever, putting your baking dish into a roasting pan with water halfway or so up the dish will do the same job, your custard will have a gentler heat. I'd love to know if you try it,. The other thing is does the Pineapple impede the mixture from setting? it's well known for messing up the setting of Jelly (Jello ?) because of the Bromelain that's in it, like Papaya. Duh! You KNOW it's custard 😂 I commented before the end didn't I?

Denise F Oven Temp is 140c/285f To serve 4.
1.2L (2 pints) full fat milk
      140g (5oz) pudding rice
      110g (4oz) caster sugar
      good knob butter
      good sprinkle ground nutmeg
Put rice, sugar with a pinch of salt in a large, well buttered baking dish on a baking tray. Pour over milk & stir, dot with butter and bake for 1 to 1 1/5 hrs, give the contents of the dish a good stir. Grate over some fresh nutmeg (if desired) and Bake for another hour to hour & a half or so, until desired thickness is reached.
What our way produces used time to get a superb result, don't forget to scrape the sides as you serve to get the caramelised sugar off.

This is the perfect rice pudding! I made it exactly as the recipe indicates, just used a can of pineapple tidbits. It has all already been eaten, and was a hit. I have another one in the oven right now. I added a can of fruit cocktail with the extra cherries this time. Can't wait :D Thank you for sharing the recipe. I love watching your videos. It's like putting on a warm blanket.

Phyllis, I too am a person who loves rice pudding. Over many years I have tried many recipes. I made yours last night and it turned out perfect. Not too dry. I had to use cardamon instead of nutmeg because I was out of it. The taste was wonderful . Thanks,
    Diane

What size dish did you use? Do you think a 9"x13" would work, or is that too shallow? I'm not trying to burn mine! lol thanks! :)

Hi Tom, I'm not sure what type of oven we built. It's just made of wood, insulated and has four metal leaves that reflect the sun into the box. The movable leaves are covered with the mirror type Mylar. The whole thing cost about $100.00 to build but the roll of mirror type Mylar was $60.00 and we only used a small amount of the roll for the oven. I bought square black bowls to use in the oven. Hope this explains the type we built.

I never heard of pineapple, fruit or nuts in rice pudding. My Grandmother made rice pudding all the time on top of the stove top. Real simple and pure. Rice, whole milk, eggs, vanilla and rasins, and sugar with a egg white topping with nutmeg sprinkled on top. I don't have the recipe, but I do remember it vividly. #preciousmemories, #comfortfood, #yummy.

Lila Arce, Raisins are a fruit. They are dried up grapes.

Our family rice pudding is like yours but without raisins or any fruit. We serve it with fruit alongside it sometimes, but not cooked into it. We also do baked rice custard which is so very yummy, especially in winter.

Looks great. I do mine on stove top with rum soaked golden raisins, milk and heavy cream and cinnamon. Other than that same as yours. I been eating this since I was a kid and it's been too my favorite dessert or what I like to call an anytimer. Growing up my mom would make a huge pot and then refrigerate until cold but I could never wait and would eat it, hot, warm, cold, room temp lol.. it's definitely one of my favorite things as well. Good idea with the pineapple I'll have to try. Much love
