Hey Laura, I used one of your previous ice-cream recipes and made my own coffee ice-cream. I can't stand instant coffee though and used a shot of Illy espresso once my custard was ready, it is heavenly. Thought you may try it out and tell me what you think, your South African fan living in France.

Or, you could take 500ml of double cream, add 400ml of condensed (the sweet type) milk and whisk together for a few mins. Then add 2 whisked egg yolks, then crush 2 tablespoons of instant coffee in a pestle and mortar and fold into the mix; this way you keep the little explosions of coffee. Beat the white of one of the eggs and fold in the mix. Pour into a freezer proof dish, cover with cling film and freeze. Take out after 3 hours and add chocky bits. No cooking, no ice cream machine. 5 mins!
To make without a machine, do about 1/2 the recipe. Put the chilled custard in a large wide mouth mason jar and put the cap on. Put the mason jar in a very large, round, metal coffee can. Pack ice around the jar & pour a cup of rock salt on top of the ice. Put the lid on the coffee can. Now grab a friend and sit on the kitchen floor several feet apart. Roll the can back & forth between you until the ice melts. Add more ice & salt until you have ice cream. It takes all afternoon but it works!
Coffee ice cream is so good! And I bet the chocolate chunks make it that much better:) Could you make hazelnut gelato? Or even like ferrero rocher flavoured with nutella or something? So yummy :O thanks Laura for never disappointing. love your vids x

Esha Ram i was experiencing the same problem some time ago too. Dont worry. All you have to do is keep ur ice cream in the FREEZER instead of the fridge overnight. Then mix in ur chocolate chips and freeze a bit more. Made this she is right it is best ice cream ever. Good luck!

Good, I don't have an Ice cream machine BUT I am getting one real soon so I've been checking Laura's different Ice cream and sorbet recipes. If your worries are that you don't have one, we already got it the first 10000000 times, indeed you don't have one, okay we all got it. for those that are interested Laura is probably using a Cuisinart Ice cream machine, do check it on amazon if you want, they also have a good set of Ice cream machines that are more affordable than the one she's using.

Just a quick question. Instead of tempering the eggs with the milk/cream, why cant you beat egg sugar mixture into milk/cream and heat together slowly?
Do the same things she does here, but skip the instant espresso, use 1/2 the sugar and add 1/4 tsp of vanilla and 3/4 tsp lavender extract to the eggs before whisking. At the point where she adds chocolate, drizzle in 1/8 cup of honey and 1/8 cup of lavender flowers. Serve in a whiskey glass and garnish with a sprig of fresh lavender. :)
Take a plastic zip lock bag and fill it half way up with ice and about 3 pinches of salt and then take another zip lock bag and add half and half CREAM, fresh strawberries (diced,tiny pieces) and some sugar. Seal the mixture bag and make sure that it is shut TIGHTLY. Then take the mixture back ang put the entire bag in the ice bag and then close that too. after that basicly just keep moving and playing around with the bag and it should start to stiffen up. Add ice if needed. DONE :)
1st. get a bowl full of ice and add some salt over it 2nd. get a smaller metal bowl to put over the bowl full of ice 3rd. whisk your ice cream mixture until it becomes smooth and thick p.s. like what laura already mentioned, you can put it in the freezer after if you feel it should be harder P.s.s if you dont like the extra work, just buy an ice cream maker lol
She has actually answered that question. And she doesn't need to say anything beyond "read the instructions for YOUR machine". The maker doesn't matter, it's the recipe and cooking techniques, which she demonstrates quite well. This is like whining that she doesn't say what kind of whisk she uses. It's a whisk, it whisks; it's an ice cream maker, it makes ice cream.

You put it in a container, then the freezer, every 1-2 hours churn it manually and freeze again for 2 hrs and repeat for a few times :))
