The Trick to Perfect Instant Pot Fried Rice

- Instant Pot Fried Rice Recipe
2 tbsp cooking oil of your choice
1 1/2 cup white jasmine rice
2 eggs
1 1/2 cups water
3 tbsp tamari or soy sauce
2 tsp fish sauce
1 tbsp gochujang sauce (or sriracha)
1 tsp toasted sesame oil
1/4 tsp garlic powder
2 tbsp cooking oil of your choice
1/4 cup green peas, frozen or fresh
1/4 cup shredded carrots
2 green onions, chopped (white part for sautéing and green part for garnish)
1 tbsp cooking oil of your choice
2 eggs
toasted sesame seeds, for garnish
Turn your Instant pot on Sauté mode and adjust the heat level to "more". Add in 2 tablespoons of cooking oil. In a bowl mix the uncooked rice with 2 scrambled eggs until all of the rice is coated. Add the coated rice to the Instant Pot and sauté, stirring constantly for about 3 minutes until the egg is fully cooked and the grains of rice are dry again. Add the water, tamari, fish sauce, gochujang sauce, sesame oil and garlic powder to the inner pot and stir to combine. Lock the lid and set the steam release valve to the sealing position. Select Pressure Cook High and set the cook time to 4 minutes. When cook time is complete allow the pressure to release naturally for 5 minutes before quick releasing the rest. Remove the rice from the Instant Pot and set aside. Press Cancel to turn off the Keep Warm mode. Then press the Sauté button. Add 1 tablespoon of oil to the inner pot. When hot add in the peas, carrots and green onion bottoms. Sauté for 1-2 minutes until the veggies begin to soften. Move the veggies to the side of the inner pot and add in the last tablespoon of cooking oil. Pour in the scrambled eggs and cook until slightly set then stir-fry with the veggies. When the egg is fully cooked add in the rice and stir to combine. Remove from heat, garnish with green onion and sesame seeds and enjoy!

I've made this about 4 times now minus the fish sauce, sesame oil and the gochujang sauce. Wife and I both love this method of making fried rice. I usually dice up a bit of chicken and fry that right before adding onion and then the peas carrots and finally egg ... before adding the rice back in before serving.
Wonderful. I took a year of Chinese cooking lessons and my teacher said that you must have three things for good fired rice: Day old cold rice, green onion and eggs. Now we can do it without having to cook the rice ahead of time or waiting for leftover rice! Thank you!
Great recipe. I have always fried uncooked rice like that, but without the egg. Then added stock and sauces, then the sautéed meat and veges. Best way to do this.

I have wanted to make fried rice, but I never think to make the rice ahead and then let it sit for a day so I just always wished for a way to do it without that complication. Thank you so much! Now the next time I want to make some fried rice it will be no problem!
This is officially my favorite recipe!! So quick and easy. The first time I tried it, I only had brown rice on hand and I followed these exact directions -- not thinking it would make a difference -- but the rice was wayyyy undercooked. (after some research, it takes about 20 minutes for brown rice in the instant pot) .. Anyway, after that, I bought some jasmine rice and followed the exact directions again and it turned out perfect!

Hey Nili what is the secret to make rice in the ip that is not sticky i cant stand sticky rice ?
For cold leftover rice, it is also good to coat the cold rice with raw eggs before reheating it for fried rice. It makes the rice more fluffy and the colour is a nice hint of yellow.

I was really skeptical about trying to make 'fried' rice in my Instant Pot. But your system looked the most promising to me. Tried it tonight, with a chicken stir fry, and my goodness I was impressed with the results! Came out quite dark, from the soy sauce, so I might try to find a lighter brand - but the flavour and texture were on point. I have never seen gochujang sauce anywhere before, so I used sriracha instead. Dialed it back to about 3/4 tbsp because my wife isn't a fan of spicy, and between it and the sesame oil, it was just a nice amount of spice to it. Love the technique of frying the rice coated in egg before cooking. This is going to be a new go-to recipe for me!

Wow, impressed! My family loves egg fried rice, I usually make it once or twice a month on the stove top. I got an Instant Pot for Christmas and we always make Chinese food on New Year's Eve, so I tried your rice recipe in the IP. Tweaked it a little (used onions & fresh garlic, no hot sauce, added some MSG) but basically everything else the same as you wrote. Not only was it much easier to cook (and clean up after) than usual-- but the family said the rice tasted better than when I actually fry it on the stovetop! That kinda shocked me, but that egg trick really works and saves me the time of having to make the rice ahead of time and cooling it off.

Bacon or ham usually goes in out fried rice, would you saute that in a separate pan, or when you do the veggies?
I've never seen this technique b4. I'll try it but I'll probably add other veggies like broccoli and bamboo shoots.
As near as I've heard, it's pronounced like "go chew jang" With the jang Like janga with no a.
I've spread fresh cooked rice on a cookie sheet and let it cool to room temp and dry out a bit for quicker fried rice, but this sounds even easier. Awesome idea.

Hi Nili quick question for you I love rice but usually I cook instant rice I would love to be able to cook my rice in the instant pot but I do not like rice that is sticky how do you cook rice that’s not sticky in the instant pot thanks in advance see you soon!!!
FYI when I set the saute to "more" for the first rice/egg mixture (min 2:05), I always got a burn notification/shutdown later when I started cooking the rice under pressure. Every. Time. When I used "normal" saute heat, it turned out fine.
I think the settings on the Instant Pot can vary from model to model. IP is always changing/improving things which makes it difficult for us recipe creators! The saute mode is something that it seems that they have tinkered with... Anyway, glad you found what works for you! My main tip is to make sure you scrape the bottom of the pan really well after adding in the water as any stuck on bits might trigger a burn warning.
I have made this recipe once before but this time I used tamari instead of soy sauce. It was very dark and I was wondering if I should have used 3 teaspoons not 3 tablespoons of soy or tamari? Great flavour regardless.
I do 3 tablespoons. We like it nice and salty 🙂

Definitely. The 3 qt holds up to 3 cups of uncooked rice.
If I wanted to add shrimp, what would be the best way to go about it?
If the shrimp are small I would just mix them in after cooking and then put the lid back on and let it sit on keep warm mode for a few minutes. The little bit of heat should be enough to cook them through without overcooking. DON'T cook the shrimp with the rice from the beginning or they'll be the texture of tire rubber! 😂

It makes about 3 cups of cooked rice so about 3 main dish servings or 6 side dish servings 🙂
Tried this twice and got error and burned the rice twice..what gives?
I had the same problem, then switched to only using the "normal" setting for sauteing the rice/egg mixture. Worked great! Made several batches of fried rice for my kids and me. Be sure and scrape the bottom of the pot well. Good luck!

My keeps saying burn and turning off. I followed your instructions to a T. and still says burning I'm so frustrated with this stupid thing.

Stir the rice while on the plate so we can see if it's sticky and mushy or not.
Every thing not to do with egg fried rice avocado oil sesame seeds I'm glad I'm British and not American.
This really isn’t fried rice since it’s not fried at all. It’s just asian style rice pilaf.
