Sri Lankan Egg hoppers and Lunu Miris: beyond breakfast

- Hoppers, appa, appam... They come by many names, but I just know them as delicious! Today we are going to be going over egg hoppers per the request of one of my viewers(shoutout to @ramithfonseka7301). Despite their simple appearance, hoppers have a mysterious origin. In this video, we are going to explore some of the background, biology, and of course the making of Sri Lankan egg hoppers(බිත්තර ආප්ප.

Recipe:(kinda... theres a lot of room for interpretation)
3 cups of washed rice
1 can of coconut water(avoid ones with preservatives/additives as they can mess with the yeast)
1 can coconut milk
1 packet yeast
2 tbsp sugar
1 tsp salt
instructions:
1. soak rice for at least 3 hours in filtered water
2. drain and blend with enough coconut water to reach a smooth consistency
3. add sugar, and yeast, and optionally add 1/2 cup of flour if too wet (note it will change the final texture)
4. allow yeast to ferment the mix for at least 4 hours in a warm place or until bubbly at the top
5. once bubbly, mix in 1 tsp of salt and heat a pan on medium/medium-high heat
6. pour in a ladle of batter, swirl the pan around, and pour out excess batter
7. add in your egg, swirl to coat the bottom of the hopper, and cover with a lid(drop heat to med-low)
8. once the egg whites are set, and the edges have turned brown, carefully lift out and enjoy!
Lunu Miris:
3 large shallots(or half an onion)
2 tbsp hot pepper powder
2 tbsp hot pepper flakes
3 tbsp optional fish powder
juice of one lime
salt to taste
instructions:
blend or mash up all ingredients together, season with lime juice and salt.

I usually have trouble finding some ingredients/tools for recipes from other countries I want to try out, it’s interesting to see you having the same issue but for ingredients commonly available in Sri Lanka 😅 Nicely done on the whole effort though, you’ve got the soft middle and crispy exterior down nicely and the techniques look great too!
