Despite its name, "Portuguese chicken" originated in Macau and does not exist in Portuguese cuisine. The dish does NOT require/contain any Portuguese sausage at all. It is basically chicken pieces simmered slowly in a "Portuguese sauce" ( en.wikipedia.org/wiki/Portuguese_sauce ) -- flavored with curry and thickened with coconut milk. The main ingredients are chicken, onions, potatoes, (mild) curry powder, turmeric powder, and coconut milk. Here is one Hong Kong cook's interpretation of the dish: ruclips.net/video/_PTKdF2JEnY/видео.html. Note that she also added carrots and celery. I would definitely NOT add celery, and perhaps not even carrots, but (optionally) white button mushrooms instead. The Hongkong cook's seems excess turmeric powder it may be caused to bitter taste. My Portugal friend had told me that Portuguese chicken is not a Portuguese food, it is Macau cuisine created by Portuguese who living in Macau, BUT the Macau Portuguese will add in the Portuguese sausage in this dish, they said that it is not a perfect Portuguese chicken without Portuguese sausage. The onions & potatoes are the main vegetables in this dish, most of them omit the carrot & celery.
@@oe_cook It appears that your Portuguese friend is trying to make the dish more continental-Portuguese by adding sausage 😊. Some years ago, I visited Macau and had the dish at a nice hotel. It did not contain any sausage. If you ask seasoned Hong Kong chefs who are familiar with the dish, they will also tell you that it does not use any sausage. In my opinion, the addition of Portuguese sausage -- either _linguiça_ ( en.wikipedia.org/wiki/Lingui%C3%A7a ) or _chouriço_ ( en.wikipedia.org/wiki/Chorizo#Portugal ) -- would spoil the delicate flavor profile of the mild yellow-curry-and-coconut-milk sauce.

Thanks for this simple recipe. However, I find it disturbing that quite a few cooks wash their meat right in the sink. Personally, I think the sink should not come into contact any food, especially meat.

剛蒸好時,雞根本唔係上碟咁深色的。我自己早已試過這個做法,係無可能單用豉油醃,然後蒸,就可以咁深色,一定要浸煮豉油汁

稻花雞應該是百佳的, 我沒有吃過這種雞, 我在百佳只買"有機穗香雞", 這個不錯, 您可以試一下, 我家附近沒有百佳, 片中的雞在惠康買, 但我不喜歡這種雞, 惠康"麻皇雞"較為好吃, 但我家附近惠康每天只來2隻這種雞, 即使等著它上貨架也未必買到.
