完全照足步骤方法烹煮一次,有以下效果:1.鸡的颜色。鸡皮无法染成视频的颜色,即使加一汤匙草菇老秋也不行。2. 鸡不入味。酒楼食的鸡既润滑,又无鸡味。困难在这里:要去除鸡味,烹煮的时间就长,就失去润滑。要保持润滑,又劈去鸡味,如何两者兼得?3. 鸡不够熟。用竹签测试时,没有血水,但斩件时,不但骨有血水,鸡肉呈红色,应该如何补救?入微波炉或再入酱料烹煮,都会将鸡毁了。视频的示范都做得很好,是成功的。但我们要学的是:如何避免失败,或者当不成功时如何挽救。希望能针对以上所述制作视频来教导我们。
