St. Louis-Style Pizza Is an Underrated Regional Pie | Food Skills

- When one thinks of hubs for great, wood-fire pizza-from Naples, Italy to Brooklyn, New York-St. Louis, Missouri isn't always the first city that comes to mind. But nestled along the Mississippi River, the Gateway City has quietly invented one of the most distinct pizza styles in America, using a smokey Provel cheese to set itself apart from the pack. Justin Bazdarich of Speedy Romeo has made it his mission to bring the gospel of St. Louis-style pizza to NYC, forcing even the most ardent East Coast pizza snobs to rethink their loyalties in the process.

I can tell you right now, people from St. Louis either love or hate St. Louis style pizza, there is no in between
sugar plumpy Looking through the comments, I can believe that.
I for one love STL style pizza. This video is an insult! That crust is way off the mark.
sugar plumpy most people in St Louis that dont like our pizza aren't from here
I went to SLU I can confirm this is true. lol. Also, everyone judges you based on where you went to high school.
sugar plumpy i think I'm a little in between. It's pretty good
He is definitely not wrong. St. Louis pizza is probably one of my favorite parts about living in St. Louis. Gotta have me some Imo's. XD
Suki Tsukiko people talk shit on Imos a lot but I think it’s because it’s franchised out now, I’ve had the best pizza I’ve ever had and the worst pizza I’ve ever had from Imos, I think that is why the experience is so different for everyone. The only way to get Imos though is bacon, sausage, and extra cheese.
Bacon Imo's watchin' the Blues, baybee!!
Everyone's getting all triggered about the provel cheese and square slice and the only thing I can think about was that he kept calling St Louis, St louie.
Louis is pronouced. Louie its french
That’s how you say it bud,
@@aidanlandwehr8295 troll level
@@jps121 LOL that is what triggered me also......I have never heard a St. Louis native call the city "Saint Louie".
@@jps121stl natives say it like that
not real st louis style pizza
the crust is a lot thinner
TRUE but this looks 10000000Xs better than Imos
@@GoHamOnEm21 imos is trash ngl, local mom and pop joints are by far the way to go in the 314
And usually cut as square slices
TheAIDSofRUclips thin crust pizza sucks. Looks like cardboard cheese burnt thin, no tomato sauce. It’s crap. Chicago pizza is way better because you can actually taste the tomato sauce not crappy thin cardboard cheese bread

I grew up in St. Louis living off of Imo's and Cecil Whitaker's pizza. Now having lived all over the country... I can tell you that STL Pizza is amazing. The cheese is what makes it totally different from any other pizza. I can't get provel in the south. It's also extremely good on a salad. #MOUTHISWATERING
Phillynate you can get prov from dominos and pizza pizza in Canada. Not saying the pizza is good but the option is there.
Thank you! Dominos in the South USA doesn't have provel (where I live atleast). They know it's too good for us. : )
but his crust is way off the mark the mark.
TOTALLY AGREE, Mark! Good catch! I love a good Imo's pizza hot or cold too. Doesn't matter.
hell yeah, love making my own stl pizza tho
Well fuck me, that pizza looks good!
This is a shit video and does not represent true STL pizza. If you ever have a chance to visit give Imos a try for a true slice of STL. THis guys crust is way off the mark.
I wasn't being sarcastic. I genuinely think it looks good. At least based on concept. I'm sure there are better places in STL to get a slice.
If you ever have a chance to visit go to Imos for a true STL pizza.
You will either like it or hate it. There doesn't really seem to be an in between but this video does not show a true representation of STL style pizza.
Liberating Plays it's not
I'm from St. Louis and it's delicious. Provel is my favorite and Imo's does a wonderful job with their pizza.
My girl's from St Louis; had Imo's in one of my visits.
Should have that again; loved that pizza to bits. Gotta get accustomed to Provel.
Keep up the great work you guys! I'd never heard of Provel cheese or st Louis style pizza before. You guys keep broadening my horizons.
That crust looks all wrong for a STL style pizza. That's not necessarily a bad thing though.
I've used Provel on lasagna before, too. Quite awesome
When I first landed in St. Louis and had their pizza, I was surprised that they cut their slices into squares not triangles. It's really thin crust and the cheese has a unusual taste, but interestingly I loved it and always found myself ordering from Imo's on Campus evenings.
This pizza was sooooo good. I'm in love with Provel now
I also live in St Louis and it's really on and off with who likes it. I like the thin crust and cheese because it tastes good and I can eat a lot of it without getting full right after 2 or 3 slices. Some people absolutely hate it though
I'm from St. Louis. The first time I ever had pizza was in 1958, I was 9 years old, in downtown St. Louis at Woolworth's. Pizza was just beginning to get popular then (I wonder if the song by Dean Martin "That's Amore" had something to do with pizza's popularity explosion...I remember a couple years early when that song came out asking my mom what pizza pie was..."when the moon hits your eye like a big pizza pie"...lol. By the early 60's pizza pie places were all over in every city and town). Anyway, there was no such thing as frozen pizza back then, so Woolworth's made it from scratch. The sausage, I suspect, was likely from Volpi (a local superior Italian sausage and meat producer on The Hill still very much in business) because it was delicious and bursting with flavor with fennel seed in it. Anyway, the pizza was made with mozzarella cheese. The first time I had provel cheese on a pizza in St. Louis was in 1964 from Imo's, who opened his first shop next door to my BIL's barber shop on Thurman Avenue in south St. Louis. It was good, but I still preferred mozzarella. I think Faraci now has the best St. Louis Style pizza, though, the best pizza I ever had was that first slice I had in 1958 at Woolworth's. All that said, what toppings and how it's sliced, pizza is merely a matter of personal preference.
I thought RUclips didn't allow pornography
Fuck that looks good. St. Louis is awesome I love you guys, shout out from Toronto!
CptCanada What up Leaf Bro!
CptCanada we love you too
As a St. Louis native, this video makes me extremely happy.
I'm not even gonna lie, this looks so fucking good
Chicago style, St.Louis, New york who makes the best pizza? Who gives a fuck give them all t me and ill eat them
I love my New York pizza and all, but this pizza looks bomb!
They’re all good but New York has the best balance in construction and texture. Many Chicago and St Louis people don’t really like their own pizzas but most New Yorkers like their own native style. Also New York population is so massive with the pizza choices that it’s not really fair to make the comparisons.
@@ramencurry6672 where you get that Chicago & St Louis people don't really like their pizzas?? You are just blowing smoke and don't know what you are talking about and have no statistics to base your misinformation on.
St. Louis style pizza is amazing. I'm convinced that people who don't like it simply don't want to. What's not to like? Crisp (and minimal) crust that doesn't interfere with the taste of the toppings...and that provel cheese which is so much more flavorful than bland mozzarella. For my money it beats two pounds of bread with a slathering of pizza sauce on top any day of the week.
Why it’s then ok to bring pizza out of Italy, or any other regional food from that region?
muzik dude there is a place called picasso’s in Jacksonville Florida that is a strictly St. Louis style restaurant. There is always a line out the door waiting for a table it’s so crowded. It’s one of the highest rated restaurants in the Jacksonville area. The owner is originally from St. Louis and they have cardinals games on tv during the summer and have gooey butter cake for desert. They also have the pork steaks.
Love St. Louis style pizza! The crust is a ‘topping delivery system’ that does its job and gets out of the way.
My god this sounds and looks incredible.
Good god this looks amazing
St. Louis has some fantastic regional food, I can't image a life without toasted ravioli and good 'ol St. Louis style pizza (from Cecil Whitakers bc they're superior to Imo's in terms of STL style)
That's interesting. I didn't know that was a thing. I am learning great regional food knowledge on this channel.
I can't wait to try this.
Sounds great!!
if you go to St Louis get montebellos pizza. hands down the best pizza. it's thin and crunchy if your into that
Haha! Speedy Romero is in my neighborhood in Brooklyn! It's really good pizza!
Ive never had it but Im craving it right now
Just to clear up confusion: Imos is fucking delicious. People who say they dont like it are usually people who aren't from St Louis but end up moving to/visting St Louis
Personally, i'd prefer if you did less "commercial for a pizza place" and more "here's our opinion on taste/how to make something similar at home".
He’s just explaining the taste you can’t really get proven cheese in most cities it’s really only sold in the lou
God damn, watching this channel makes me hungry!
Great seeing u on colbert sean!
The best thing for a hangover! Yay Imo's Pizza!!!
these comments are just a cess pool. nobody gives a fuck if you think this pizza looks disgusting or not. I've had pizza from Italy, Chicago, and New York and they all have unique, enjoyable features
I'm severely biased as a native St. Louisan who loyally eats Imo's and Cecil Whitaker's to this day, but I honestly prefer it by a mile compared to the big pizza chains. I sort of get why it's an acquired taste and hasn't spread around the country, but I don't care. When STL style pizza is made right, it has the perfect amount of crunch and soft gooeyness you can't find anywhere else. Btw, while I'm sure this restaurant makes really good pizza, that isn't STL style pizza because it has to be equally thin edge to edge.
Joe Boccardis in STL. That's the pizza!!
Ehh they ight.
There are alot of pizza restaurants in Chicago who make similar pizza pretty cool given that it's not that far from St.Louis
Never had this, but it sounds interesting.
Looks like a dope pie
I'm from St Louis, the pizza is what I miss the most
I dunno about all these toppings, you give me a thin crust with provel and bacon and I'm set. Good stuff right there.
why we dont have a stl pizza place showing this
Whoa, whoa, whoa. You gotta have a thinner crust and the sweet tomato sauce. The cheese is a must, but it’s not the only aspect of an StL pizza.
Damn it, now I want to try it
i live in kc and occationally visit st louis mainly for that pizza.
Loki thought this guy was Ray Romano. His pies look 👌 I'm sure everbody loves them
i'd love to try the cheese
Pickled peppers on pizza, nice! 🍕
I'm sold, shit looks great
Chicago does that square party cut too
Big points for the old Grateful Dead tee.
Provel is an acquired taste. I personally enjoy it. Imos is great, and Dogtown may be my personal favorite frozen pizza to get.
Born and raised St. Louisan and the best St. Louis style pizza was brought here by a guy from New Jersey.
Never knew thattt
Pizze look like the utmost expression of deliciousness and quality specific to St Louis even if the "cheese" is highly highly processed, but where can I get that awesome Grateful Dead printed tee??? PLEASE!
Okay that bugged me. The pizza isn't thin enough, there's a visible crust around the edge, and no one went for the corners. The corners are the best part.
Now I really want to know what their best-selling pizza is!
when I’m with friends from the STL our pizza is just ok. When I’m w friends from other places, Imos is the best shit out
Yes please
Pinks pizza in houston is my spot. Need to try ginos east i love chicago deep dish an havent found anything locally as good an mangia near me.
You do need to try Gino's East. This St. Louis shit isn't fit to lick the sweat off Gino's balls.
Annddd now I want pizza.
I only knew of NY style pizza and Chicago Deep Dish, but apparently there's a STL style pizza as well? Also I've read about Detroit style pizza recently? I wonder what else I'm missing. (Besides pizza actually from Italy of course)
Why did I watch this when I'm hungry af
Need more Sean.
ive worked at imos when i was 18 n theres no chedder at all in provel...... its 2parts provelone and 1 part mozzarella blocks being shredded and mixed in....... and ppl the best way to enjoy imos pizza who says its crap try dipping the pizza in the house italian dressing... it makes it more delish
The sauce is sweet. The cheese is processed. It’s a St. Louis thing right thurr.
Leo's Pizza in KC. I can't eat it anymore because I am lactose intolerant. Last time I had it was decades ago. I would love to eat it again but then I would be laying naked on the bathroom floor. I can make my own pizza at home using Kraft Cheese because it's lactose free.
how does it compare to Johnny C's in Shawnee? KC represent!
I’m from St. Louis and I’m not really a fan, it’s definitely something I enjoy every now and then but it’s not something I’m after all the time. Definitely try if you never have before.
Ayyyy, who else is from St. Louis here? 🙋🏾
Oh yeah...that looks good.
Wanna try this, but disappointed they didn't go to STL to look at STL pizza
Jack Jones well to be fair everyone in STL knows about it. Most people in NY don't.
n8saces Right, but I'd prefer that First We Feast travel to STL to show the rest of the world STL pizza like they did with Po Boys in NOLA
you showcase a Brooklyn pizza shop.... talking about a St.Louis pizza.... Why not just go to St. Louis and promote one of their pizzerias?
Thank you, seriously come here and try MonteBello's or Imo's (which is like the McDonald's or St. Louis style pizza) get a taste of the real stuff and then you cam spot the NYC fakes.
oh christ rly
Stevie M nah lol saint louis has rough spots but not all of it has those crazy crime rates, its mostly isolated to a few different parts. Fenton, for example, is rich as shit and the crime rates are below the national average last I saw.
Peeley Player fenton is in Jeff county. In what fucking universe is that Saint Louis?
Ethan Kemper dude St. Louis is 40 cities, you know he didn't mean the city of St. Louis
St Louis: it’s a party cut! This sets us apart.
Chicago: you mean tavern cut?...how about you literally hold my beer.
Chicago trying to take credit for something they had nothing to do with. What's new?
St.Louis pizza is the best pizza
Needs more Sean.
Call it what you want, I'd call it delicious!
Looks better than any St Louis pizza I've had.
I didnt know!
Is this what Andy Cohen was talking about during his hot ones episode? lol
The "square party cut" is very well known to be called Chicago Cut. Sooooo really they just took the idea and are trying to use it as their own.
Never heard of the Chicago cut. I live in St. Louis, have been to Chicago a couple of times, lived in Illinois. What country is the 'Chicago cut' very well known?
St. Louis started the square cut on accident.
You should do a review on dogtown pizza
I love St. Louis style pizza.
Didn't know Ed Helms was a pizza maker on the side!
314 gang
Saint LOOEY?? WHAT THE FUCK IS THAT????
D5quared91 the proper way to say Louis is louee
Tell that to someone who grew up there!
Louis Gillet: No, its not. St. Louis is short for Saint Louisan. If you're going to correct someone, you need to be correct first.
I used to listen to a shitton of Nelly and he says "Saint Louee"?
I dunno, but I'll MEET YOU THERE
I can only do provel with a super salty topping like bacon.
Yo you guys should show off Juicy Lucy style burgers
I'm from St. Louis
I'll take it
I'm going to get diabetes watching first we fest
wait til you get some type of french/red dressing for dipping. diabeetus 4 life
Sean, PLEASE, do yourself a favour! Go to Amsterdam (in europe!) and head to the restaurant "De Nachtvacht" , order their Large ribs (prolly smallsize for americans as its 500grams or so) BUT.... the flavour....! It rivals and surpasses most ribs. I know 2-3 americans that swears by these as the best in the world, and thats sayin alot. So if in Amsterdam, look that restaurant up!
Well it's a YES to me
They cut a round pizza into squares. Oh my!
DeadBugEngineering yup and the best part is the edges.
I take the trian from St.Louis to Chicago to get pizza, fuck with me 😤
Bruh I stay in STL and just had imos last night . That ain't no damn STL pizza boaaa better come get some imos the square beyond compare 😂
StL in the house!
I’m from the St.Louis area and I’m just shocked that a person outside of St.Louis acknowledged the existence of St.Louis
As an STL resident, provel cheese is one of the most vile creations known to man.
Square cut is Chicago cut buddy.
