The only GF crust I've had success with is the one I filmed a few weeks ago. It is made with shredded ("hash brown") potatoes! The crusts I've made with GF flour mixtures and xantham gum were a nightmare to roll out. After baking, these same crusts crumbled into dust when cut with a fork.
You mentioned your spouse does not eat Gluten- do you have gluten free pie crust you use-? we have tried almond and coconut flours- I have found a Keto flour by Bob's redmill- which I will be trying to make a crust -most gluten free flours contain corn which we cannot use thanks

I mix butter and coconut oil but I actually prefer coconut oil over the butter! I make all of my cookies and other desserts with it..!

I think that butter extract (or butter flavoring) would be welcome in this crust.

Hi Mrs B - I have successfully replaced butter with coconut oil for biscuits, but I have not (yet) tried the same for cookies.

The crust seems to be rather softer than a regular butter crust. Was it my eyes deceiving me or was it softer?
The coconut oil dough was definitely softer than the all-butter dough. Still, it baked up surprisingly well and had a nice crisp texture.
I do the same thing. Clean my hands then get them dirty 🧤
