    Fire Baked #BBQ Beef #Ribs in The Wood Fired Oven
    8 pounds beef short ribs bone-in
    3 tbsp extra virgin olive oil
    2 teaspoons salt
    2 teaspoons paprika
    1 teaspoon ginger
    1 teaspoon rosemary
    ½ cup barbecue sauce
    1 bunch chopped fresh parsley
    1 bunch chopped fresh Lettuce
    1 fresh lime
    10 Spring Onions
    1 red onion
    2 teaspoons olive oil

    Tried to make this today. Ribs in a baking tray, covered with aluminium foil. 2 hours at about 400 C. Result was a piece of smoldering charcoal, it was on fire when I took the tray out of the oven and took the foil off... not sure 2 hours is the right time for the ribs as suggested...

    Although a nicely made video (no loud music and even no voice overlays) I have to echo the comment made by Mike Kramer. I have a brick wood fired pizza oven and this evening, after viewing your video, followed your video direction to cook short ribs. Oven was 800 degrees F, and left the tray in the oven for 1.5 hours. Removed the tray, removed the foil to check the meat and found it black like charcoal. Total waist of $40 worth of good meat. I find it hard to believe your video demo portrayed the meat as shown in your video, cooked in the conditions as you outlined. For anyone contemplating following your lead as outlined in your video, I'd suggest they rethink this approach. I wish I had followed my gut instinct and cooked the meat at more like 200 degrees F for 6 or 7 hours. But based on your demo I thought I'd give it a try. I consider myself a good cook (not chef quality but a good cook) and this was one of those total failures. Perhaps you'd care to add more comments to show how you achieved the results shown in your video. The outcome looked good, but I'd surmise you perhaps left out some information to achieve what you did. Totally ruined the cook pan as well. I'll chalk this cooking fiasco up to experience and rethink this as I look to my next try at cooking short ribs.

    I personally wouldn’t leave ribs in that amount heat for 2 hours. Maybe if it was a quarter of fuel used?

    Bro, cooking ribs at 800f for two hours is going to smolder them. I'm skeptical that's what actually happened here.
