Hello again, Jessica! I'm itching to get things planted, too, but fear.of frost has me a little bit paralyzed!😂 I have lettuce out there that my husband and I (we're empty-nesters) have been enjoying mostly as salad, but also tacos. My cabbages, broccoli & Brussels sprouts have been out for a couple of weeks. But I babied my seedlings way too much to gamble on planting them just yet. Maybe later in the week, or early next week. I tried wild Violet Jelly this spring! It's lovely and yummy! I tried to start dandelion vinegar, but it was a no-go.😢 I've been trying to harvest things as I see them this year. I have been dehydrating lilac, violets, cleavers, & chickweed. I also dehydrated the remainder of my homegrown garlic, ready to turn into powder. Trying to stay busy, but there is always a party or a wedding, or something else to lay claim to my time. So that means balance. Even empty-nesters have those problems!😉

Good morning! It's always so nice seeing your videos each week. I started making my own salad dressing this past year, and I wonder what took me so long.😂
If you use Italian seasoning, you can make your own mix for that, too. My family likes my blend, and I keep them supplied. I've also made za'atar, poultry & pumpkin pie herb/spice blends. They are so easy and I usually have everything I need. I'll have to try a veggie dip mix blend to my pantry.
Thanks for sharing your life with us.

Thank you for all the great mixes recipes. The homestead is looking lovely and alive. I came across a recipe for those who don't homestead or garden but want to try something new. Take store bought frozen veggies and dehydrate them. Grind into a powder as fine as you'd prefer. Add this powder to rice, potatoes, soups ,sauces and whatever else you'd like for a little added flavor and nutrition.

    Yay for spring harvests!
I have found that when making vinaigrette I like it better when I start with hot water and seasoning, let that sit for a few minutes, then add vinegar and oil. It makes it harder to use the convenient measurements on the carafe, but results in a more flavorful dressing.

Great idea: Buy a product you like, read the ingredients, experiment with making it yourself for a cheaper and healthier product. Yeh! Of course, you may need a freeze drier so you do not have to pay the big prices for freeze dried foods. But I bet on a smaller scale a person could use this strategy even without a freeze drier. Thanks for your lovely videos. God bless!

I had forgotten about dandelion jelly. As children we picked flowers in the field before mowing. My mom had my cousin and I pick the leaves, which became a game of whose pile was higher. How exciting to see the spring harvests beginning! Thank you for the link for the funnel. I didn't know they made this and will really enjoy having such a helpful kitchen aid. I also am learning to make my own seasonings. Another advantage besides skipping the chemicals is that you can adjust how much you need to use and don't end up with those little packets folded over spilling. I have also noticed that they seem to be using a lot more fillers in the prepackaged seasonings. Its always great to know exactly what is in our food. Looking forward to more canning and preserving tips.
