I don't have a pressure canner, so what I do is soak my beans over night (I soak a lot) and then I slow cook them in my slow cooker on low for 4.5 hours. Once they are all cooked, I bag them in sandwich sized Ziploc bags, using a serving spoon with slits to not gather up too much liquid. I fill them about half way then lay them down flat and stack them in my freezer in my kitchen. Once they've frozen flat (easy to store and thaw) I move them to our larger freezer in our garage. Thawing is a breeze, I open up the bag and add warm warm and that helps to allow the beans to slide right out of the bag without needing to break it open, so you can wash the bag and reuse it for something else later. You can pop them into your stock pot or skillet at that point and cover it with a lid for a few minutes to get them to thaw out thoroughly. And that's it!
I don't want to dismiss what you are doing with your empty jars, i love your are so diligent and just wish that I could do this, too. My health is very poor at this time. I saw another use for our empty jars that might help those of us that could be left without water services. We are currently in flood stages and our water in many areas has been compromised. I saw full shelves of canned WATER. What a good idea to put clean, safe drinking water in glass and can them.
If your kids like pasta, cook up some elbow noodles and put a scoop of them in the bowl before adding the chili. I didn't grow up eating it that way, but my husband did. I started doing that with our kids as well. It's a great way to stretch that chili out and turn it in to a chili mac.
I took the turkey carcass home from my Aunt’s Thanksgiving and made broth too. My family thinks it is crazy to make broth. I just nod and smile and cook down those bones.

I had an idea for a "cupboard challenge" for me to try throughout 2024. I have more cook and bake ware than room to keep it in my relatively small kitchen.. Some of it is on the sentimental side as in Aunt Mary's this and mom's that. My challenge to myself is to identify anything I haven't used in a year and repurpose, re-home, resomething it. Wish me luck!
Another way to fill empty jars if you don't want to dedicate as much time cooking and canning is to put together the dry ingredients for different baking projects. My kids and I put together brownie mix, pumpkin muffin mix, zucchini muffin mix and biscuit mix yesterday :) they had a blast and it saved me some time on future days!

Good morning Jessica and family! Such a good idea keeping the jars full, even for two people like us. Made a batch of your cranberry juice this week. Get my cranberries here once a year from Snopac foods. They are based here in Minnesota, so it is nice to support a more local business. I really like all of the ideas from this week's video. It is wonderful motivation for the winter months! You might be doing this already, but an idea and easy source for making broth. I was able to get 27 lbs of beef femur bones left over after butcher from my local mom and pop butcher shop for $1lb. They filled two 18qt. roasters and will make wonderful broth with the marrow in it, yum! This time of year as you know, is the busiest time for butchers and easier for someone who is looking for a good inexpensive source for making broth.🥰😊God bless and take care!
I always enjoy your little bit here and there canning. I realized as I was watching you make your chili base and your beans that it would be easy to can a base to make the Italian soup Pasta Fagioli. I lived in Naples Italy for 2 years and locally they don't tend to add much meat to it. So doing a can of "tomato base" the cooked beans and the pasta would make this all day dish come together quickly. Especially if you added your garlic pucks or garlic scapes to it. Just an idea for the future if you wanted a different flavor. I'm doing pumpkin cubes and turkey broth this week too! Have a great week and thank you as always for your inspiring videos.

Comment on jelly: Last week I was given some unloved quince. I basically chopped them, boiled them, put the clear liquid in a pot until done. Also not pectin. I make all of my jams without pectin Until you are comfortable eyeing the jam or jelly, my suggestion is to use a candy thermometer. For jam I always looked for 218 and jelly 220. Basically, cook it to soft ball stage. I used the quince pulp to make quince sauce (with sugar). Quince might be an acquired taste, but I love it

Like you I like to make meal making simple. When I feel good I take full advantage to do canning. But right now, I am in the empty out freezer and jars stage since our solid 9b zone has it's best planting time coming up in just a few weeks (Christmas Day anyone??) Already putting in green onions, garlic and lettuce. I'm late on the garlic, but I'll manage. Will be checking big freezer for any spare cranberries for juice and sauce though, making way for this year's harvest. YUM

Our turkey was almost 26 pounds and my husband smoked it with apple wood. Soo good! So I made turkey broth, too! Cooked it 24 hours and was able to freeze 13 quarts of broth! It will be amazing to season greens, dried beans or anything with that applewood smoked flavor! I plan to get a new canner. My canner has been passed down to me from my mother-in-law and it is so old I'm just afraid to trust it. I can't even get gaskets for it anymore.
I love the dry bean canning tip, especially with the vinegar. I do can dry beans. Why not? When I cook a pot of beans, it’s always too much. I would much rather open a pint or 20 oz jar of my canned beans. I never presoaked and risked overfilling and having syphoning. Love your channel.

Staying organized, not my strong suit, I even get lazy with labeling the lid. Yeah I put the year on it but then I start “abbreviating” with initials and that can get a little interesting later on:) I play this little game show with myself in the pantry guess what the initials me.:)

I have used freeze dried fruit (powdered down) to make colored buttercream for cakes. But rehydrating with juice is a great idea!
😊 I do the refill as they empty plan. The last few yrs, "Canuary" is a blessing. I use items from the freezer & root cellar.
Those freeze dried cranberries would be good in cranberry orange muffins or quick bread.

When I make my turkey broth, I save the bones, dry them completely and turn them into bonemeal for the garden. No waste!

I really enjoy your videos on keeping stocked for winter. This is a marvelous method of maintaining the food pantry. I haven’t canned in a while however I stock my freezers In similar ways. Tomorrow I make and freeze homemade chili!

Staying organized, not my strong suit, I even get lazy with labeling the lid. Yeah I put the year on it but then I start “abbreviating” with initials and that can get a little interesting later on:) I play this little game show with myself in the pantry guess what the initials me.:)
