  • Today we share with you our new creation of a vegan and gluten-free chickpea apple pie that is made out only of simple and wholesome ingredients. By incorporating nutrient-rich foods like chickpeas and fresh apples, we've crafted a pie that's not only amazingly delicious but also extremely nourishing and filling. Whether enjoyed on its own or accompanied by a scoop of your favorite dairy-free ice cream, this pie is sure to impress your loved ones and leave them craving for more.
    Instructions:
    Begin by soaking raw dried chickpeas overnight. Rinse them thoroughly the next day, ensuring all the soaking water is strained out. Set aside.
    Clean and cut the apples into large chunks.
    Transfer the rinsed soaked chickpeas and the apple chunks into a blender.
    Add coconut milk or cream, maple syrup, and vanilla extract to the blender.
    Blend the ingredients until you achieve a creamy and smooth consistency.
    Incorporate coconut oil into the mixture and blend briefly to ensure even distribution.
    Brush a circular baking pan with oil and line it with parchment paper.
    Pour the creamy batter into the prepared baking pan.
    Insert extra apple slices into the batter to create a traditional apple pie design.
    Bake in a preheated oven at 350°F (175°C) for 1 hour.
    Allow the pie to cool completely before transferring it to the refrigerator for 3 to 4 hours, or until it achieves a hardened texture reminiscent of an egg pie.
    Enjoy your delectable creation as is, or pair it with your favorite vegan ice cream for an extra indulgent treat!
    Ingredients per 1 chickpea apple pie (6 servings):
    1/2 cup (100g) raw dried chickpeas
    250g apples (approximately 1 1/2 large-sized apples)
    400ml (1 can) coconut milk or cream
    1/4 cup maple syrup
    1 teaspoon vanilla extract
    2 tablespoons coconut oil
    Extra apple slices for decoration (approximately 100g)

    Energy: 357 calories
    Protein: 5.42 g
    Fat: 24.73 g
    Carbohydrates: 33.02 g
    Fiber: 5.4 g

    Sounds really good AND nutritious if the texture is smooth. Can I use brown sugar instead of expensive maple syrup?

      Actually, even with all of my lentil recipes (I have quite a few), you can skip the eggs and just add a bit (like a 1/4 cup to get the right batter consistency) of cottage cheese or other creamy dairy you may be using. Each recipe has something special and I’m almost sure everyone at home will love them including your little one 🙏💓

      @@zaracooks yup I do experiment with just omitting eggs in some recipes that have them, or just use Flax egg or egg substitute. Whipping up aqua faba is an easy alternative to egg whites too, so there's lots of options. I just keep looking out for new ideas and inspiration. 🙏

    Can I leave out the oil, which is not allowed on my medical diet?

      Certainly, yes, if that is a recommendation of your doctor 🙏
      Oil (moderate quantity here) adds some softness and of course more taste to the pie but coconut milk is already rich enough to keep the pie still very healthy and delicious 🤗

      @@zaracooks Thank you. I actually have to sub homemade oat cream for the coconut milk, as the latter is also not allowed on my very restrictive diet from hell. I'll have to see how subbing the coconut milk and leaving out the oil goes.

      Oh, it doesn’t have to be yellow apples (golden delicious)! You can use the red ones too. You just need to use a type that is good for baking 🙏

    Can we use canned chickpeas? How many grams of those correspond to 100g of the dry chickpeas?

      I tried the recipe with cooked chickpeas and it worked fine although the overall texture was less hard! I think it will work with canned chickpeas as well but as I said it might turns out more like a custard texture (with soaked raw chickpeas it gets really hard like a regular cake, because of the starch that is missing in cooked chickpeas) 🙏

      @@Mandy_30 I haven’t weighed the soaked chickpeas to answer your question, unfortunately. I did for the dry ones (1/2 cup or 100 g) and that at least will double in volume and likely in weight? I would suggest you go with about 200 g canned chickpeas for this recipe 🙏

    Amazing! Did you try adding psyllium? Just made one with psyllium, waiting for it to cool down😅

      No, I haven’t. Psyllium husk is a great addition (for fiber) but it’s quite expensive and not everyone can afford it.
      Also, this pie can get quite solid (after 1 night in the fridge), just like cheesecake cake, so I thought it’s not necessary to add another ingredient like psyllium 🙏
