Canning Louisiana Figs Pick and Cook

  • Traded some fish for figs so decided to make a pick and cook. This is an old traditional Louisiana style fig canning recipe.

      Thanks, I try to can figs like this every year. My wife and I love them and I use the syrup on pancakes for a little fig flavor. Enjoy!

      My wife loves them and I could eat a whole jar at a setting. I save the syrup for pancakes and waffles, nice fig with a hint of lemon syrup.

    I CAN FIGS BUT I MIX THE SUGAR AND WATER A BIT BEFORE I PUT IN THE FIGS SO NOT TO SMASH THEM I MAKE FIG JAM SOO GOOD

    Didn't know you had to spray fig trees. Mines 37 years old never been sprayed.

      We have a blight down here killing all the citrus trees and it wiped out my figs also.

    We canning Well sweep figs right now. Best i can tell on my research at least. We love them made into Strawberry jam. Also great on ice cream and pancakes Biscuits cakes. OMGsh so good any wich way they arw done. This method looks mighty good also. And will will mark your technique and recipe. Mite also add that they are delicious done like orange marmalade too. Some of our favorites... thanks for sharing your recipe 😊👍✌️

      I love the strawberry jam also. Did not get enough to can this year but still have a reserve from last year. Enjoy!

      I use the juice from these figs as pancake syrup. Guess that is one of the many reasons why I am fat!

      Im no skinny minnie myself. But i got 6 pints of syrup toooday. Lol. Ill be making a hot buttermilk biscuit just any day to eat with it. 😉. And it will be good. Ohh. And my hubby n i came up w a new recipefor them. We added Cherry jello to them and i thought. Man i wish i had one more box cause it wasnt very strong flavored. So i asked him i wonder what a pack of that black cherry KOOL AID would be in it. We had 1... only. Before i know it he dumped the whole pack in 😱. I thought that dunn it !!((. Its gonna be kool aid bitter right ..??!!!?? It was AWESOME .!! They tasted exactly like canned cherry Pie Filling and just as thick .. WE ARE MAKING MORE !!! Highly recommend trying it. I had half a boiler full of figs. 3 packs of cherry jello and 1 pack of Black Cherry kool aid as i said. Pinky promise. Soo delishious 💝✌️

      @@immalivingagain3672 Your jello / kool aid jam cheat recipe caught my eye today. In southeastern Idaho we used to use those great, huge, overgrown zucchini for jam too. We'd just seed them and grate them up skin and all with strawberry jello, sugar and pectin to make "faux straw" jam. They'll take on whatever flavor jello you use beautifully. Big zucchini makes a nice relish too when they're overgrown like that. Just seed them, grate them up with their skins on and follow your favorite relish recipe.

    You don't water bath them?

      I do not water bath them after jarring. All the jars seal and I eat them for years after. The sad thing is hurricanes have destroyed my friends grove (saltwater Intrusion)and I don't have enough trees to can a batch.

      Every batch is a little different. I hate to overcook it and burn the figs.

    Far too much sugar..should be 10lb and 5lb.
