The amount of sugar most recipes call for is ridiculous. Those of us with diabetes can not eat it so to find your channel is a blessing to me. I also do not use artificial sugars so I love this recipe.

I just made your recipe. I had 4 lbs of figs. So I upped all the other ingredients but just a bit. I didn’t have any honey so I used the Agave that I had on hand. I used the same amount that I would have used for the honey. OMG it was wonderful. I had to cook mine down for almost an hour because there was so much liquid. This fig bush was in our yard when we purchased the house. The fig is Greek. We know the previous owners and the gentleman own said that his ancestors brought over the root in their pocket when they landed at Ellis Island. My brown Turkey and my Italian are not in full sun so they are not producing much. It made 2 quarts, one pint and they are in the water bath now. The little left over we will be smearing on pork tenderloin in the next day or two. YUM. I really liked this recipe because it didn’t call for white sugar. thanks Karen. (Oops it made 2 pints, one smaller jar and the tiny jar!!!!!!)

I have made about 7-8 batches of this and it is delicious. I just finished a batch and I have noticed that mine takes more like an hour and a half to get to the right consistency. Tonight I omitted the water. In the past I never boil jars I just make sure they are sterile and fill them with hot jam, put the lid on and turn it upside down. Caps always pop. Thanks for the recipe, hopefully next year will bring me as many or more figs than this year! This is the first year I am getting about 3-5 pounds a day for the last 10 days or so.

Good stuff. Many years ago we had a family friend who would make fig preserves without sugar and they were some of the best fig things we've ever had. Everyone else that's ever given us preserves they made, we had to throw it away. It was so sweet you couldn't even eat it. It would make your teeth hurt. It was more sweet than just eating a big spoonful of sugar.
Well anyway, those people are long gone and we haven't done the preserve thing since, but I'm looking to try it.

Loving this channel I just found today. I’m brand new at canning/preserving and want to try this recipe with our fig trees that are producing right now. However, I noticed another commenter stating this doesn’t contain enough sugar or acid to make the jam shelf stable… Can someone advise please?
Thank you. You can water bath can these to seal them if you like. That would make it shelf stable. We usually eat through the amount that we can in about a month.
This sounds delicious, but I'd have to blend those figs into a puree or something. I hate 'chunks' in my jams - I want them smooth as frosting.

Awesome! I keep mine in the fridge for a few months with no problem. You can water bath can it and it will keep for a few years.
I have three gallon bags I will be processing for jam tonight. I have never canned without regular sugar, but it's my understanding that it preserves color. Have you ever made enough to put up with this recipe? Wondering if the honey is enough to preserve the color. I realize (at least I think you do) I will have to add more acid to be shelf stable.
I have never heard of the color preservation thing. They all turn a deep brown color when cooked. If you have a good amount of sugar, you do not need an acid because the sugar is an acid. Every year I get more and more figs so I am now putting them up.
I was hoping you would be canning since I am hoping to can. This will e a first time.. would you give me an idea or a process to follow for canning?
It would just be a water bath canning process. Just like canning peaches or pears or applesauce.

I don't know if dried figs will work. I have never tried that. They may not have the ability to reabsorb a lot of liquids.

Great video! All new info to me. Also, we use agave syrup almost exclusively. How would you modify this recipe to use the agave? I'm pretty sure it's sweeter than honey. I prefer the dark amber agave.💖

It is honestly up to you. I actually find honey sweeter than agave ;-) Start with 1/4 cup and move up from there.
I used 1/4 honey and 1/4 cup agave, just because I ran out of honey. Delicious!
Question: how long should you boil if doing a water bath? I have a massive amount of figs and need to can them. I've done 2 batches prior to seeing this video, and I cooked for 12 minutes (recipe said 10 minutes). Now I'm worried that wasn't long enough. This is the first thing I have ever canned. 10 minutes is fine for fig jam.

@@CountryLivingExperience I have no idea. I planted it in a large tub over 10 years ago, with the idea that I could move it around, but I left it in the same spot for so long that it's obviously put down roots and has gotten quite large. This is the most figs I've ever gotten from it!

How long do I process the preserves?
It all depends on your heat and stove. I reduce them until I visually see a good consistency. Sorry, I cannot be more specific.
Best fig preserves on youtube. Ripe fruit..No sugar! I add NO sweetener...not needed. I like the spice added idea..try curry!

Did you add the lemon? I don’t like tasting lemon in another flavor. He said citrusy. I wouldn’t like that. Wondering if citric acid would work and have no added flavor?

can't these preserves be frozen? I"m going to prepare some in the next few days. As of now, the preserves will go into the freezer.
You can but I am not sure how the consistency will be when it is thawed. It is best to water bath can them.

That’s not fig preserves as I know them - it’s more of a jam. I love fig jam and my husband loves whole fig preserves.
The recipe looks delicious but not enough sugar or acidity to can and put on a shelf. Figs are a low acid fruit.

Not really that much. It will degrade nutrients like Vit C and Vit B.

Sorry, not sure. All figs are different sizes. A medium sized bowl full...maybe.

FYI honey is still sugar-as agave etc. is it is just more natural then white sugar and somewhat better for the body. Heading us not accurate since you are still adding a sweetener disguised in bee clothing.

Those are alma figs. Not brown turkeys. Almas get ready towards the end of august. Brown turkeys get ready in July. Alma’s also don’t last very long but I’ve been growing and picking figs since I was a kid and these are alma figs not brown turkey figs.
