Hi ichang, I used to work in Batu Pahat Hospital and so this beriani shop is quite an often stop for a quick lunch. However, in my opinion the only beriani shop worth going to in Batu Pahat is Beriani Mohd Shah located near the river, specifically at Kompleks Niaga Benteng, Peserai. It's cheaper, and taste way better, in fact my family and I have been eating there for as long as i remember, more than 30 years. 2 of my sibling's wedding even was catered by them. Give it a try!

..if I'm not mistaken the word Gam mean Glue. when they cook the rice they put the chiken/lamb/beef at the bottom of the pot. then they put the rice on top of the chicken/lamb/beef. they mixed first the rice with all spices needed. when they close the pot they put flour around the edge of the pot so as the pot and the lid will be glued together. the pot will become exactly like the pressure cooker. the juice of the chicken/ lamb/beef will mix with the rice and all the spices. this will make the rice more fluffy & flavourful and the chicken/lamb/beef more tender. ask around I might be wrong...😃

If u watch japanese variety show.. in gourmet segment, they always describe the food they eat exactly same like ichang and jimmy.. they describe the food in fine and simplest thing so that the viewer can imagine the taste.. and that food review should be… not like malaysian food reviewer.. what they know is only say sedap giler. You should come to the neighbouring district Muar after this, just 1 hour from Batu Pahat. Here got the original Mee Bandung Muar, Asam Pedas Muar, Morning Satay for breakfast and a lot of fresh seafood. Everything are delicious in Muar 😊
Arrive for Lunch - Asam Pedas then late evening for Mee Bandung Udang Galah. Overnight at the town and nightwalk for Bentayan streetfood. Next morning have satay for breakfast together with lontong

It will be tightened with a dough of flour placed on top of the pot before closing with the lid to prevent the air from escaping. Some would further tighten by placing some bricks on top of the lid. Gam (gum) or glue might be referring to the layering of masala that acted as a ‘gam’ or ‘glue' that is glued in between the layers of rice.

Yea that's what we do when we balik kampung hahaha breakfast at Ramli Kopitiam pasar for Day 1 then go to pasar to buy ikan mayong to make Asam pedas ikan mayong for family lunch. Then drinks at Rengit Coffee in the evening and go to Ramli BP Jalan Sultanah for another round of buns, and proceed to Mamak shop afterwards for ngeteh, or dinner at Kelapa Muda restaurant Prt Besar for Thai food, or sometimes just eat Nasi Goreng Daging at Taman Mewah. Breakfast at Beriyani Md Shah for Day 2 and also tapau some before going back to KL. We didn't really do Mee Racun since it has gearbox, gives headache lol 😄 Used to eat a lot of gearbox fried rice from a restaurant in Tongkang Pecah, just before Munchy's but already stopped since it also gives headache 😆
I find it so amazing how in one country,we can have many many versions of briayani rice dish ! And than when other race in Malaysia starts to make it too ,it can be totally interesting taste in the end . Example nasi lemak,have you realised if make by Indian people it have curry curry taste and when a Chinese make it , it has that Chinese taste to it .....

If so, in the morning there is nasi kerabu and lontong in front of the Taman Soga surau which is around 200m from the briyani restaurant, and the lontong is to die for! Briyani DAM from India. Briyani GAM from Malaysia (Johor). DAM and GAM, India n Malaysia respectively. But definitely related, briyani originates from India but in Malaysia it is blended with Malay way of cooking, as you mentioned it yourself, you been to India and now in Malaysia, and so you are personally able to discern yourself the differenced between DAM (India) and GAM (Malaysia)!..😅
Thay call biryani gam because we seal/ glue ( gam in Malay is glue) the pot when we cook the rice using wheat dough. The biryani in Malaysia usually consist of ( depends on the restaurant/ stall) : 1) nasi biryani 2) kambing/ mutton 3) ayam/ chicken 4) kuah 5) dalca gravy - usually it has potato, eggplant, dhal 6) pencuk/ acar timun/ salad 7) acar buah ( that one you call it chutney , but it is not chutney) 7) papadom
I am Johorean and Muar folk. I think it was named beriyani gam because of the method of cooking. The lid of the pot was stick together to the cooking pot using flour dough in order to complete the cooking.
The best briyani in Batu Pahat, as I was told, is Md Shah Briyani in Pelangai, a suburb of Batu Pahat, if I am not mistaken. I tried there only once, most of my trips there I was disappointed that the food was sold out by 11:00 am and I was late arriving from Seri Kembangan in Selangor!

Wahhhhhh.. its my hometown.. welcome to batu pahat.. actually, there are two places which famous with Nasi Briyani, one is Briyani Power, BP and another Nasi Briyani Md Shah. I would glad if you could try at both places. ❤

Kambing gravy is actually Kambing masak Briyani. Briyani is made from a mixture of spices which is also used in cooking Nasi Briyani . The vegetable curry is known as Dalca. Acar Buah is sweet but Acar Timun has a little spicy and sourr taste which suit Nasi Briyani very well.
I remember coming here about 20 years ago. I was addicted to it. Went there again the next day. If I am not mistaken, the kambing one is the signature.
finally both of you in my hometown. For batu Pahat 2 place always pop in mind for beriyani that is the one you try here and beriyani Md Shah (recommended) but need to go early coz its realy popular . Actual Dum Briyani originated from mongul,where all the soldiers after war come and eat together with family and frens.then beriani spread to all over,india pakistan and all middle east country and finally all over the world.may be the method differ according to countries and culture. Dum mean marinate chicken,or meat ,rice cooked with masala or spices keep inside slow fire with fully covered. And the king of beriani is the big amount of fried onion with sweet taste. And the best combination or best fren of beriani is boil eggs and raita is a must.
There is one saying, if you start from Northern Peninsular Malaysia, the further south you travel the taste of food goes milder and milder, and until Singapore, it becomes…… never mind 😅

Johor food is pretty different from other states in West Malaysia. Almost as much difference as Sabah & Sarawak food. When are you visiting East Malaysia?
Originaly it's not Gum but Dum. There are few types but Dum mean seal tightly in the cooking pots with flour dough and then technicaly cooks slowly on high ,medium and low heat. The process of making Dum Biriyani are very technical. The Batu Pahat version is difference but still good for M'sian.

Acar buah is the best to eat with rice related to curry. So Delicious 😋 The sweetness in acar buah will give extra kick taste in our mouth

The 'sambal kambing' is actually 'kuah beriani' and the light kari is dalca.
Although my dad is also from batu pahat, his version of nasi beryani comes with spicy sambal chicken, kambing beryani and vegetable curry. The sambal chicken give a punch to the beryani. 😀
I think in Singapore there's this dish as well but over here it's called Dum Briyani.

Kambing gravy is actually Kambing masak Briyani. Briyani is made from a mixture of spices which is also used in cooking Nasi Briyani . The vegetable curry is known as Dalca. Acar Buah is sweet but Acar Timun has a little spicy and sourr taste which suit Nasi Briyani very well.
I remember coming here about 20 years ago. I was addicted to it. Went there again the next day. If I am not mistaken, the kambing one is the signature.

finally both of you in my hometown. For batu Pahat 2 place always pop in mind for beriyani that is the one you try here and beriyani Md Shah (recommended) but need to go early coz its realy popular . Glad you enjoy the food there, but I would like to recommend you to try 'Mee Racun' in the center of Batu Pahat..

Actual Dum Briyani originated from mongul,where all the soldiers after war come and eat together with family and frens.then beriani spread to all over,india pakistan and all middle east country and finally all over the world.may be the method differ according to countries and culture.
Dum mean marinate chicken,or meat ,rice cooked with masala or spices keep inside slow fire with fully covered.
And the king of beriani is the big amount of fried onion with sweet taste.
And the best combination or best fren of beriani is boil eggs and raita is a must.

Originaly it's not Gum but Dum.
There are few types but Dum mean seal tightly in the cooking pots with flour dough and then technicaly cooks slowly on high ,medium and low heat.
The process of making Dum Biriyani are very technical.
The Batu Pahat version is difference but still good for M'sian.
