@@chrisdelmonte983 This is not pancit. Pancit is a Filipino version that taste completely different. This is Cantonese rice noodle. Not a lot of chinese restaurants have this in thier menus but they usually the Singapore rice noodles which is the same with with added turmeric powder.

我是台灣客家人,我的炒米粉,會多放一些肉絲,放點冰糖及醬油加米酒紅燒一下,肉有味道及軟一點,盛起來備用,然後放點油(不是豬油,我怕豬油的味道),將香菇,蝦米,紅蔥頭爆香,加入洋蔥,胡蘿蔔及大量的高麗菜,高麗菜炒出來的水分鮮甜,加入適量的鹽,加入清水洗過的米粉(台灣苗栗尖山的純米粉),米粉不須用開水川燙過,否則太爛,不好吃,再加入紅燒過的肉絲,米粉吸收高麗菜的水分及紅燒過肉絲的醬油,拌勻後盛起,我家當中醫師的女兒超愛吃的,每次回來,只要炒米粉就好,吃不完打包帶回去,繼續吃。
在台灣這叫(台式)炒米粉!十紅蘿蔔有點晚放了會不夠熟!

豆芽、包菜可以晚放,但總覺得紅絲太晚放、會太硬了。
@@TasteSays 我個人也相信有熟,畢竟紅蘿蔔本來就可以生吃。不過我媽媽在看影片時也覺得太晚放,因為熟透了的紅蘿蔔比較甜,而略生硬的紅蘿蔔,有的人會怕它容易有一種特殊的味道。我個人就是不愛未熟透的紅蘿蔔,但熟透的就很喜歡。

這炒法跟我們家的差不多 用料也是差不多 不過有些順序有差 蛋的話會弄成蛋酥 然後會用蝦米 紅蘿蔔絲跟高麗菜會在洋蔥肥肉斯爆香後下去一起炒 另會還會放泡過水的乾香菇絲 炒好後是會醬汁都加入好後才放米粉下去伴炒 最後才放芹菜段 有時候還會撒些油蔥酥 最後裝盤在放上蛋酥
