    Larry, if you are eating low carb, one of the alternatives to the daikon radish are turnips. They are just a miniscule higher in carbs than the radishes, but they are not sweet, and have a taste and texture very close to a potato. If you decide to try them, they do not need to be par boiled as long as a potato. Depending on the size of your dices, simmer them 8-12 minutes, check at 8 minutes with a fork, you know the drill, i like them better than the daikon radish or parsnips(have seen some folks use those) , i think you will like them, you and I seem to be on the same page on a lot of recipes and techniques in cooking, maybe because we are from the south.

    Oh man how I have love chunky homemade corned beef hash. Try it with rutabaga instead of the radish. It's amazing and the flavor is more mellow and not so peppery.

    Did this the other day and it was DELICIOUS! I've never before worked with daikon and was surprised at how well it came out. The texture is pretty close to potato, maybe a little softer. This is definitely a recipe that will frequently come out of my cook book for dinner!

    Daikon radish is very delicious especially when pickled! There are some great asian recipes out there for that for sure.

    Daikons are delicious and cook up really tender. I love them in soup, esp with turnips. I never thought about using them in corn beef hash. Clever!

    Larry, thanks for informing us of national corned beef hash day! I don't think I can wait to enjoy this recipe though. So, I think I'll make this for Cinco de Mayo! I think daikon radish is the PERFECT potato substitute! I've put it into fish stew, and made crispy french fries out of it that we liked better than potato fries. Your hash looks at least as good as anything made with real potatoes! Here goes another recipe to add to my favorites! Thanks so much my friend!

    Great recipe. The primary goal I have is to get away from most of the ready to eat items. My body can't take all the preservatives In processed foods. Your recipe was simple enough that even I can follow it, thanks.

    Looking forward to trying this recipe. Thank you for posting. I have used daikon radish with shepherd's pie. I just peel, boil and mash, using a little cream cheese and a TBS lupin flour to thicken it up. It's so low in calories and carbs that I don't mind that it doesn't taste exactly like potatoes.

    Sup Larry, corned beef hash is my absolute favorite thing on planet, kinda, lol. Rarely have a homemade hash I don't like, I made it a passion in culinary school lol, learned roasting one, browning and put rack in pressure cooker, way better than boiled, haven't boiled in 19 years lol. Cure my own, and bacon, and pastrami. Some cold cuts, but after st Patrick's day I stock up on sale🎃, I mean everything in store 🥺, and cure hundreds of pounds a year, yes addict, but once a month I make a big batch, get eggs donated from farm, work gives bread, potatoes ect.. and I do a community breakfast for homeless, leave rest at the center. Been there and can pay forward, lately been chorizo hash and linguica hash to break it up, beef crazy prices. I'm going to put some on the griddle now lol. Tyvm tc
    PS, crap saw how long that was, said passion lol. Forgot parsnips make good substitute too. Have to have the egg, and have steak weights to get flat and crispy in cast iron or on griddle 🤤, I can't stop🥺, griddle still heating.....

    Love corn beef hash....I do use the canned variety of beef though....and lots of vidalia (when in season) onions and black pepper !

    when cooking the corned beef add a onion in the pan and it removes some of the salt the dicon radish is very similar to turnip

    It's really good with pumpkin. Sounds odd but pumpkin works in the place, or with, of potato in lots of recipes.

    We use yucca in the same way you have used radish. Try yucca witty mojo and egg in the morning its sooooo good. I lost and maintained 25 lbs now over two years lo carbing and I have missed corned beef hash so much!

    Larry, Larry, Larry. You have hit on what I would say is my very favorite meal of all time. Well, at least for this video. I love corned beef hash and if I could, I would eat it every day...with two eggs sunny side up. I also have enjoyed the canned version, although not so much these days since it doesn't seem the same as in days gone by. (I confess, I also like the canned corned beef...that's a left over from way back when I was a kid in the 50's). Any way, although I'm a big fan of traditional, I also love new things and the radish idea is something worth trying. Around St patty's day corned beef brisket around here was far too expensive to even consider. Maybe now I could find one on the cheap. I'd love to give this a try. Thanks for the great low carb recipes!

      +Terry Lyle I'm with you Terry, canned corned beef hash 30 years ago seemed to be SO much better than it is today. I bought a can of it about a year ago because my wife and youngest daughter had never had it and I simply could not eat it. I don't think I've ever tried canned corned beef though......that might be in line for a future 'what are we eating' video! The radish was nice in this dish, but like I said maybe not a great 'potato' substitute in all dishes. I loved the peppery radish like taste it had once cooked. Thanks for watching!

    You can get better cube dices with the radish using one of those chopping boxes. I forgot what they’re called. But you can get small and medium cube dices. I prefer the small blade.

    Daikon is one of my favorite vegetables raw or cooked or pickled! it can be used in many ways and in Asian Markets it is usually very inexpensive. If you like pickles look up Takuan there is a LONG process version and a quick version, guess which one I make? I have also used it in kimchee mixed 50/50 with nappa cabbage, I like the taste but the smell of the fermented cabbage is a bit much for my wife. this is a great idea, I never thought of it! Thanks!

    Watching this made me so hungry! I love corned beef hash. That is more of a dish from up north and it is not on the menu much where I live in the deep south. When I do find it I get it. I have to admit that I love the canned stuff. I have to say that is is one of the most unhealthy foods out there. I could have sworn that you were using real potato when I first started watching the video. Thanks!

    Well, you have certainly piqued my curiosity. While I’m not on a carb free diet, I always enjoy trying new recipes. I think I’ll look for a small daikon radish and try half the recipe with that and the rest with potatoes. I’ll let you know what I think!

    Interesting to see someone use daikon radish, I hardly ever see it used around here. Personally, I have memories of it because when we had home made miso soup it always had daikon radish in along with carrots and etc. Clearly an underappreciated veggie in the US.

    LOL! Thank you so much! I never knew there was a national corned beef hash day! I must add it to my calendar.
    I've never had a dicon radish either, but I "think" I've seen them, and now you have me really curious. I must find one! And then I have an excuse to break out one of the corned beefs in the freezer.
    When you plated the CB hash @ 5:17, before you dug into it, it looked like the United States. Except Florida had been amputated. Or sunk..... LOL

      +TheWolfePit It is entirely unacceptable for people to spell things in ways other than how they're pronounced. If it's to be spelled Daikon, then pronounce it day-con, not die-con. And the rat poison is D-Con, pronounced as spelled, not Dicon. You damn nurtheners... it's a miracle you communicate at all! LOL

    After you used the daikon radish, I couldn't help but wonder how turnip would taste in this. I think the parsnip may be too sweet for it. Love those eggs!!

    Only things that I'd do differently is to cook the corned beef in beer instead of water, since that's ALWAYS how we do corned beef. And I wouldn't trim all the fat away. Why? Because fat = flavorrrr!

    Love corned beef hash for breakfast but only allow myself to have it on special occasions like my birthday due to the carbs (and fat in the canned version). This looks like a great alternative. Although cutting up that daikon looked like a pain in the butt....

      as a side note, I've done many corned beef briskets for st patty day and none ever came out as tender as what I'm seeing here...so regardless, I'm going to have to try this....

    I had better luck pan frying the boiled diakon for about 5-10 minutes in skillet. After you boil & drain the daikon, you toss with w/ 1 tps of baking soda (promotes browning, lower maillard reaction temp) and 1/2 TBS of cornstarch (that is just 4 grams carbs for whole batch - def worth it), and then pan fry with butter that for 5-10 minutes. It turns a nice brown without overcooking the corned beef. Then do the rest of the recipe normally.
    It really takes much more like the fried potato version. Also at end, add zest of a lemon.

    When you first showed what you'd be cooking I thought those were potatoes. It looks really good Wolfe & I'm not a fan of corned beef. TFS! Keep up the great work! :)
