"Pizzi" from Salento | Italian bread

Pizzi Salentini, or Pizzi Leccesi are rustic Italian sandwiches, seasoned with tomato, onions and black olives, crunchy on the outside and soft on the inside. A typical recipe from Salento street cuisine, to be enjoyed at any time of the day: as a snack, appetizer or to accompany an aperitif.

INGREDIENTS
400 g white flour
400 g re-milled semolina
12 g of dry brewer's yeast
500-600 g of water
10 g of salt
20 g of EVO oil
150 g black or green olives
100 g cherry tomatoes
1/2 onion chopped
a spoonful of capers
