For as much as I love the Sallet, I think it's a poor choice in jousting equipment in general. If we're sticking by germanic arms, that's the entire reason Frogmouth helms exist.

It’s hot so you’re waiting right up until your fight to put your gear on and you’re in a rush, sometimes shit happens. It’s a lot easier to remember after your gorget saves you from taking some hard hits directly to the neck and you realize that a blade catcher on a fencing jacket is not anywhere near enough protection for longsword sparring.
