  • How to cook ham yourself It's easy. Today I'm going to show you how to make a ham yourself. Do not buy the ham, make it at home using the homemade ham recipe.
    Ingredients:
    1,100 g pork
    1 L cold water
    25 g sea salt
    25 g curing salt
    4 cloves of garlic
    3 bay leaves
    Peppercorns
    3 allspice
    1 tbsp mayoran
    Put the meat in the brine.
    Cover and leave to marinate for 3-4 days.
    During this time, turn the meat 3-4 times.
    For cooking:
    2 liters of cold water
    1 tbsp salt
    1 tbsp marjoram
    2 allspice
    3 bay leaves
    When the water has reached 90 degrees, put the meat in it.
    Bring the water temperature to 82-85 degrees and reduce the heat.
    The meat should cook at 82-85 degrees.
    The temperature inside the ham should be 75 degrees.
    The cooking time is 1 hour 45 minutes (in my case)
    Cool quickly in cold water (baking bag, pack waterproof).
    Put it in the refrigerator for a few hours.

    Tips for cooking ham in the oven. Place the meat on the wire rack in the oven, place a tray underneath to catch the meat juice. Set the temperature to 50 degrees. Gradually increase the temperature to 80-85 degrees. The temperature inside the cooked ham should not exceed 75 degrees. Use a kitchen thermometer.
