I think that need to speak incantation is connected to how hard or strong spell is, which can differ between individuals and time. All mages(not counting druids and shamans now) have to first reach into magic flow, but student in Dalaran will probably use incantation even for something like Fireball, while someone like Jaina might use portal spells to known locations without speaking a word. More you know/use the spell, more you can form it simply with your mind. As for hand movements, those can be kinda equal to power of the spell. Bosses often have long casting time while they stand in the same pose, basicly channeling power into the spell and then releasing it with final word of incantation. On the other hand if you just need to set fire to some woods, simple flick of the hand will probably be better than fulblown hand motion for fireball. XD Nice work. Keep doing videos like this. ;-)
