I think strength of mind is so important for getting over injuries. I think being positive helped so much after my foot surgery, I was back up and running way before anyone anticipated (with my surgeons approval of course). Good luck, keep smiling!
Go to breakfast - porridge made on the stove (with half a scoop of strawberry shortcake diet whey protein. Chop a banana up into it. Then crush a honey and oat nature valley bar on the top. Then finish it off with honey squirted on the top. Delightful! Usually wait around 2hr 15 before I run - I seem very susceptible to stitches whether I eat or not before my runs.

I could not understand the name of one of the ingredients that looks like small dark grains or seeds (min 3:15). You said you add to everything, so it must be geed. It sounded like chiersses?
A bit of both.. sometimes I have a vitamin tablet, but try to get it from food.. which isn't easy! I have regular blood tests and it's always ok for me though :-)
I wonder why so much packaged/canned stuff? is it lack of time, lack of the whole foods? As an example, it takes an effort to cook rice, beans (pre soaking overnight, cooking) or humus (just basically chickpeas with paprika and lemon juice) but it tastes soo much better and i suppose it is more healthy option.
We have a rice cooker.. we cook all our own rice 99% of the time. But we have run out and our local supermarket has also due to Corona. But they had these packets that we used in the video. Beans we just use cans as yes, it's convenient.. and cooking ourselves is still way better than ready meals etc, so it's a step in the right direction.

The reason being that chia seeds are a superfood meaning the nutrients are densely packed in the seeds. If you eat more than 1 tablespoon per day you end up with "expensive poop". Your body is just not capable of absorbing more than around 1 tablespoon of chia seeds per day. Someone has any thoughts on this??
I only tend to put them on my breakfast.. or if I don't, then they go in a shake... doubt I'd have much more than a table spoon a day. Like most things.. there is only so much your body can absorb.. so it makes sense!
Love these what we eat videos, for breakfast I’ll have overnight oats using natural yogurt instead of milk, or if it’s a Sunday I’ll have a bagel toasted, couple of rAshers of bacon, poached egg and some rocket salad :)

I feel like I have struggled a lot with energy and fatigue recently, particularly on long runs and my iron level is 18 but doc says should be over 40! I am told it is common for runners to have deficiencies in iron? Is it really important? Any advice please? Much appreciated.
Great Video Ben and Sarah from another plant based eater. When we really care for our body and not about the tongue, cooking becomes so much easier. Adding healthy things, mix them up with some spices and eat it.

Fellow plant based eater here, do you take a B-12 vitamin (cyanocobalamin) , or rely of fortified foods?
A bit of both.. sometimes I have a vitamin tablet, but try to get it from food.. which isn't easy! I have regular blood tests and it's always ok for me though :-)
B12 supplements, normally I can get most of my B12 from fortified plant milks though. Harder to get them these days
