Hi Marion! Big fan :) Keen to try this! Small tip: when we use Saffron in any dish, particularly Biryani (which has Middle Eastern roots too) we usually bloom it with Milk and not water, that way you can put the entire thing into the rice. We also soak the rice in water for 10-15mins just to bloom the rice too!

I make pilaf with chopped carrots, bell peppers (green ones) & onions & jasmine rice. My father in law taught me to make rice when I was 19 & I have always made it the Thai way using my thumb to measure water!!!!

If your making stock on the weekend, make more and freeze. I make it in my Instant Pot, 4 hours. Then i freeze in 500mL pasta sauce jars. It's quite concentrated.

I am Iranian and this recipe is mouthwatering. I am definitely going to try it tonight. Btw I would love to recommend you to try Fesenjān as I see you are also a fan of pomegranate molasses. it is one my go to Iranian dishes on a weekly basis. I prefer it sweet and sour a good mixture of both world. Some part of iran cook it sour and some part cook sweet and in tehran most people at least those who I know prefer it sweet and sour.

If you can get tamarind paste, that is a good substitute because it has a similar sour flavour. But you'll need to add 2 tsp sugar per 1/4 cup of tamarind to give it some sweetness, and also simmer it with a couple of tablespoons of water to give it a syrup consistency.

(I'm in Canada) I find it much richer and more flavourful than stock cubes. 2) How do you keep herbs fresh in the fridge and for how long? I'm having trouble just standing them in water as they turn before I can use them all. If you have a tip, I'd love it. Throwing things out these days ($) makes me a bit crazy.
