Zereshk Polo Ba Morgh/ Persian Barberry Rice with Chicken

  • ZERESKT POLO IS A PERSIAN DISH LITERALLY MEANS BARBERRY RICE IN ENGLISH. THIS IS SERVE WITH CHICKEN, SABZI AND SALADS. YOU CAN COOK AND SPICE THE CHICKEN THE WAY YOU LIKE IT COZ ITS ALL ABOUT THE RICE..ZERESHK MEANS BARBERRY AND POLO MEANS RICE.
    INGREDIENTS:
    FOR THE RICE
    2 cups basmati rice
    1 tbsp salt
    1/4 cup oil + 2-3 tbsp
    7 cups water + 1/2 cup water
    FOR SAFFRON WATER
    1/2 tsp saffron
    1/8 cup hot water
    FOR BARBERRIES
    4 tbsp dried barberries
    1 tbsp sugar
    2-3 tbsp butter
    1 tbsp saffron water
    1 tbsp pistachos
    FOR THE CHICKEN
    4 chicken legs
    1/4 cup oil
    1 medium finely chopped onion
    1 tsp salt
    1/2 tsp black pepper
    1/8 tsp chilli powder
    1 tsp sweet paprika powder
    1/4 tsp cinnamon powder
    2 slightly crushed green cardamom pods
    1 tbsp turmeric powder
    2 tbsp tomato paste
    1 cup boiled water
    You can buy barberries and saffron either online or at Iranian stores or Middle Eastern stores

    I'm a kiwi from NZ & married a Persian girl in Shiraz in 95. We lived with her family there for 6 months. We always cooked & ate wonderful Persian food. I flew my parents out for our wedding there & I was just looking through my mums fotos of all those years ago. The memories made me want to create something from that time for her & I found your video & made this meal to perfection. Thanks for making this & bringing back wonderful memories.     I was in Iran in September 2022. I loved the friendliness of the people, the culture and the food. I loved this dish and I finally decided to remake it.

    That looks so incredibly delicious! My neighbor is from Iran and I was invited to dinner with them. So warm and the food was just amazing! That was also the Zereshk. I'll cook it again. I fell in love with Persian cuisine. I'm going to go to the Persian market here in Hamburg this week and buy the ingredients from your video.

    I'm from Belgium. We had Iranian neighbors 20 years ago. Their 21-year-old son committed suicide.
    Every year on the day son passed away, mother brought us this dish every time. It was sooo delicious. We ate it very happily (with little sadness from son).
    After years I went to an Iranian restaurant and I ordered this dish. It was absolutely not as tasty as what made us neighbour.
    I'm sure this prep in this video is going to be as delicious as our neighbor made it.

      Food has an important place in Iranian culture. We prepare special dishes and set the table for all ceremonies, whether happy or sad. Zereshk polo is not a common food at mourning ceremonies, but it was probably the poor boy's favorite food. I hope he rest in peace and you can come to Iran and taste the home-made taste of this food again.

    You can also add potatoes with the chicken and onion it makes it extra tasty 🥰 but you did an amazing job as an Iranian I’m proud 👏🏽👏🏽

      Potatoes dont go with Zereshk Polo in Persian recipe style thats why comes & eat it with rice & call it Zereshk Polo..
      maybe u can use the thin slice of potatoes for crispy thicker in bottom of rice for rich tachdeeg

      Thank you for your appreciation. The savory taste of the chicken is perfect with the sour taste of the barberries. Maybe if you put dried lemon in the chicken, you will get too sour dish

    I already made persian rice the traditional way, but once I tried it in the rice cooker and I think it came out same. I always think of your video, when I try not to waste any safran ☺️
    Now I want to make the chicken, too. I just wrote all the steps down. Do you really use this amounts of paprika and cinnamon? It seems you took a lot of more.

      Thank you. They have this special rice cooker that Persians use. You can choose which color of tahdig you want. In general, I prefer to use pan in traditional way, I even gave away my rice cooker😅. The paprika poeder can be up to 2 teaspoons, it can't go wrong but the cinnamon, it needs to be just this measurement, or a bit less unless it's more meat ofcourse you add more

    Yummylicious but thet rice can be sour and tart snd sweet like Albaloo Polo the Cherry rice. Btw, have you ever prepared shirin polo Orange 🍊, almond, pistachio rice for specisl family occasion and Addas polo for other occasions b4??? My persian friend says that its recommended to be eaten with chicken dishes usually, but NOT with Ghormeh sabzi or koresh the persian stews or so...
    Quick questions: Are preparations for making perfect Gormeh sabzi so intense like some other persian stews???
    Do you think any sweet sour persian rice I mentioned pairs well with beef soltani instead of 🐔 ????
    Btw, persian cusines are so unique and interesting flavor at the same time...

      I'm sorry for the late response. I haven't tried rice with oranges because this kind of rice, wouldn't be eaten by my husband and 2 children. I love addas polo with meatballs and ghormeh sabzi ( my first favorite Persian food) is better to eat with white rice, same as kebab soltani and kebab koobideh. I think joojeh kebab can be eaten with zereskt polo, albaloo polo and jewel rice

      Hi, yes I agree with you especially if you are in a hurry. But in this Persian way, you get a very delicious, and fluffy rice

      Hi, Marlene. Indeed i don't put lemon juice. I suggest that if you want to add lemon juice, better to add it little by little until you reach the desired sourness

      Hi, barberries are dried barberry . If you can't find, you can substitute with dried cranberries or sour cherry

      Hi, this is how I learned to prepare saffron from my Persian mother in law. Although I learned on internet you can indeed put it on the ice cubes, i guess i always still use the hot water

      Yes, you can. Persian have this cranberry rice as well and with this chicken recipe, it's ok to combined with cranberry rice as substitute for barberries

      Makapal mostly ang pita bread pero kung tangalin mo ang upper layer para maging manipis pwede as tahdig. Or you can use this potato slices for tahdig

      Hi, Persians put salt in the rice for the taste and to keep it from breaking.

    Iran is a large, beautiful, and ancient country. The people of Iran are kind and cultured. The only problem is the regime of the mullahs in Iran. The people of Iran despise the mullahs. Please remember us by Cyrus the Great and his Cylinder of Human Rights and the help he provided to the Jews, and by Reza Shah the Great who helped Polish refugees, not by the mullahs.
