Tastes like Galaktoboureko! Creamy Semolina Pudding: An EASY Holiday Dessert Idea!

    Ingredients
    3 cups whole milk
    1 cup (240g) granulated sugar
    1/4 cup (40g) fine semolina flour
    1 tablespoon cornstarch
    2 whole eggs
    1 egg yolk
    1/4 teaspoon salt
    2 teaspoons pure vanilla extract
    1 tablespoon butter
    optional: 1 tablespoon orange blossom water or rosewater
    Garnish:
    Chopped pistachios
    maraschino cherries
    Instructions
    Add the milk, salt, and half of the sugar to a saucepan. Place over medium-heat and cook until steaming hot.
    In a mixing bowl combine the eggs, cornstarch, and remaining sugar and whisk together until smooth.
    Temper the egg mixture by slowly adding the steaming hot milk to the egg mixture while whisking together.
    Pour the mixture back into the sacuepan and return to medium-heat. Cook will whisking constantly until it boils and thickens enough to coat the back of a spoon.
    Remove the pan from the heat and add the butter, vanilla, and orange blossom water. whisk together until smooth.
    Divide the pudding into serving cups or bowls and allow to cool completely.
    Garnish with chopped pistachios and a maraschino cherry in the center of each pudding cup.

    The pudding can be made the day before it will be served and refrigerated.

    My favorite dessert! I make it all the time. I use farina….. lol I think I’ll just try it with the semolina flour after all these years

      @@sandybowman7140 it comes out so delicious , my husband is the Greek. I cook really good Greek, Spanish and Italian lol beside tons of other ethnic foods… lol try not cook much now

    Thanks for sharing! I used 4 cups of milk, half cup brown sugar, 2 whole eggs and roughly half cup semolina. Oh I also added butter ghee because that’s what I have at home. The result is amazing 🤩

      Happy holidays! I just wanted to clarify that this pudding is made with semolina flour and therefore it's not gluten-free.

    When i make puddings like this i add equal quantities of sugar to semolina / ground rice etc

    What is the purpose of the semolina? Would flour work the same?

      Semolina gives it a heartier texture. Flour or cornstarch will make a smoother pudding.

    If semolina is pan roasted it can be left in a bottle in the pantry for a long time without it going bad

      Yes, absolutely. Coconut milk would work and oat milk too. As for the butter, you can leave it out completely. Let me know how it turns out :)
