    Hi. Love your channel.
    My grandma used to cook pudding on the stove with milk.
    I was too young to remember her ingredients, but your video reminds me of her pudding. She made it on the stove hot milk and chocolate. When it cooled in the refrigerator it had a hard "skin" film on the top, under neath was smooth and creamy.

    • @deebee533
      @deebee533 2 года назад +5

      Me too. Granny made the best pudding on the stove. And that film part wasn't bad either. Hate Jello's version. But been afraid to try homemade version.

      Actually it’s very easy.
      4 c. Milk, 1c. sugar, 1/2c. cocoa, and 1/4c. corn starch. (Some do a pinch of salt. 1 tsp. Vanilla. 1tbsp. Butter)
      *to prevent that ‘skin’ on top, you lay cling wrap on top but it must be touching the pudding.
      But I like the skin, it tends to have a bit more ‘bitter’ taste that goes nice with the creamy underneath.
      My kids were spoiled when small. I bake everything. Of course my kids were shocked when the first saw that you can buy soup in a can. But my wife and I enjoy cooking together, it’s about the only time we like each other 🤪. Well except for when we made the boys😳🤦‍♂️🙄😂.

    Yes I know this sweet. In Germany we call it Pudding, in Italy it's called crema pasticciera and in Greece we call it κρέμα.
    Just we don't boil the milk in the beginning and we don't caramelise the sugar, instead we mix sugar, vanilla, starch and egg yolks with a little bit of milk and then add slowly the whole amount of milk and after that we heat it. So we only need one pot. And the amount of egg yolks can vary and some people use whole eggs. In Greece we also add cinamon on top, in Italy and Germany no. In Italy they can add a bit of gratet lemon peel. And in all 3 mentioned countries they can also add cocoa powder. In Germany I also have eaten it with melted chocolate inside.

      @@irnasarwar5015 the more eggs you add, the less starch you need. The yolks give more taste, than the egg white, so the more yolks, the tastier. Theoretically you can also add 9 eggs if you use enough milk. I think the ratio should be around 6 eggs for 1 Liter of milk, but you'd better google that. I personally for 1 Liter of milk use 6 full table spoons of starch or flour, 6 table spoons of sugar and 2-3 eggs (depends on the size).

    We don't use corn starch here in India. We curdle up the caramelised milk(by keeping the mix undisturbed for a day or two in room temperature) with pistachio, ground cardamom and little pieces of almonds, saffron flower petals and cashew nuts. After the curd forms, we refrigerate it for serving after a couple of hours.
    I'll try this one though, looks and should be tasty. Thanks for posting. 🙏🏻😊

    Delicioso !!! En mi país Colombia tenemos dos postres parecidos, uno es la natilla, tradicional de navidad, pero no lleva huevo. El otro es el flan de leche, que sí lleva huevo, pero se cuece en horno. Me gusta esta versión, precisamente porque no necesita ser horneado.

    Siiiii, aquí en Guadalajara, Jalisco, México 🇲🇽 una monjita que cocinaba para los huérfanos del hospicio Cabañas en Guadalajara, inventó las JERICALLAS para poder alimentar mejor a los huerfanitos y que también le rindieran los víveres y asi nacieron estas jericallas igual son con leche y huevos, RECETA: Se pone a hervir un litro de leche con una ramita de canela de 6 a 7 cms, y aparte se incorporan muy bien 6 huevos Clara y yemas juntas con una taza de 250 mililitro de azúcar y si se desea ponerle 2 cucharadita cafeteras de vainilla es opcional y a esta mezcla de los huevos y azúcar, se le agrega la leche muy caliente OJO, de a chorlito y batiendo constantemente hasta incorporar todo muy bien, se cuela y se pone en recipientes que aguante el horno (refractarios) estos recipientes se colocan en una charola de aproximadamente 8 a 9 cms., de profundidad, se pone la charola en horno de 180° centígrados OJO 👁 pero ya que se pone la charola en el horno, inmediatamente de poner la charola en el horno el siguiente paso es poner 4 centímetros de agua a la charola con “mucho cuidado” de que no le vaya a caer ni una gota de agua a los recipientes que en este caso ya serían las jericallas y OJO: como a los 15 minutos de poner las jericallas al horno, checar el agua de la charola y cuando se consuma un poco volver a ponerle agua caliente y de 50 minutos a una hora, ya estarán cuajadas y listas las jericallas, si se tiene horno con encendido arriba estarán más pronto y se durarán más de la parte de arriba las jericallas, cuando se tiene horno de fuego solo abajo, la charola se pone en la parrilla de enmedio y si el horno es con fuego abajo y arriba, la charola se coloca en la parrilla más abajo, si se pone en flaneras de tamaño normal o sea como de unos 180 mililitros, sales 8 JERICALLAS, espero y le guste esta receta y un saludo desde MÉXICO 🇲🇽

  • @Day-tm2pb
    @Day-tm2pb 2 года назад +4

    Natilla, but it doesn’t take soo much risk with the sugar and milk, just boil the milk and mix the sugar with the eggs and cornstarch well before slowly tempering the egg mixture with the hot milk and then after all is mixed in, heat a bit again and make sure the cornstarch is well incorporated and it cooks a bit, then it is all done. You can make some caramel and put it on top for a more crème brûlée like taste
