  • Chiroti (or Chirote) or Phenori is a traditional sweet from Indian cuisine, particularly popular in Karnataka and Maharashtra. It's a flaky, deep-fried pastry made with fine layers, garnished with powdered sugar or sugar syrup. Here's a simple recipe for making Chiroti:
    Ingredients
    For the Dough:
    All-purpose flour (maida) - 1 cup
    Water - as needed
    A pinch of salt
    For the Paste:
    Rice flour - 2 tbsp
    Ghee - 2 tbsp
    For Frying:
    Oil or ghee - for deep frying
    For Garnishing:
    Powdered sugar - 1/4 cup
    Instructions
    Step 1: Prepare the Dough
    In a mixing bowl, combine all-purpose flour, salt.
    Gradually add water to form a stiff yet pliable dough. Knead well for 8-10 minutes.
    Cover the dough and let it rest for 30 minutes.
    Step 2: Make the Paste
    Mix the rice flour and ghee into a smooth paste. This paste will be used to layer the dough.
    Step 3: Roll and Layer
    Roll the layered sheets tightly like a cylinder and cut them into 1-inch pieces.
    Flatten each piece gently into small discs while retaining the layers.
    Step 4: Deep Fry
    Heat oil or ghee in a deep pan over medium heat.
    Fry the discs until golden brown and crisp. Drain on paper towels to remove excess oil.
    Step 5: Garnish
    Sprinkle powdered sugar over the fried chiroti while they are warm. Alternatively, you can dip them in a light sugar syrup for extra sweetness.
    Serving Suggestions
    Serve chiroti as a festive sweet, often accompanied by warm milk.
