Written recipe - Instant Jalebi Prep time: 5 minutes Cooking time: 20-25 minutes Serves: 10-12 people Ingredients: Syrup: SUGAR | शक्कर 2 CUPS SAFFRON | केसर A FEW STRANDS CARDAMOM POWDER | इलायची पाउडर A LARGE PINCH WATER | पानी 2 CUPS LEMON JUICE | नींबू का रस 1 TSP (ADD THE SLICE) Batter: REFINED FLOUR | मैदा 1 CUP GHEE | घी 1 TBSP BAKING SODA | बेकिंग सोडा 1/4 TSP SOUR CURD | खट्टा दही 1/4 CUP WATER | पानी 1/2 CUP (ADDED GRADUALLY) Frying OIL / GHEE | तेल/ घी AS REQUIRED (FOR FRYING) Method: Add the sugar into a deep kadhai along with saffron, cardamom powder, water & lemon juice, switch on the flame to high & bring the sugar syrup to a boil. Set the flame to medium & boil the sugar syrup for 8-10 minutes or until it reaches almost one string consistency. To check, pour a few drops of the syrup onto a plate & let it cool down, then take it on you index finger & using your thumb tap on the finger gently & pull it apart, a string should form & break immediately, or the sugar syrup should feel sticky, do not cook the syrup until it completely reaches one string consistency. Switch off the flame & set it aside. To make the batter, add refined flour with ghee into a large bowl & rub it well to incorporate the ghee. Next add baking soda, mix again & add sour curd, water & whisk to make the batter, make sure to add the water gradually, the batter needs to be stretchy but free flowing. If the batter is very thick then the jalebi will turn out to be chewy & if its thin then you won’t be able to shape them at all, the batter should be thick but free flowing. Let the batter rest for 5-10 minutes, until then add ghee/oil into a flat frying pan & heat it until it becomes moderately hot (165-170 C), it is very important to use a flat-bottomed vessel & the ghee/oil should only be an inch deep. Once rested, add the batter into a piping bag & cut a thin hole (1-2 mm appro.), you can check the thickness by shaping a jalebi in a plate, you can adjust it according to your preference. Before frying the jalebis you will have to keep a small set up ready, you will require - a pair of tongs to fry the jalebis, a perforated spatula / tongs to dip them in sugar syrup & sieve to transfer the dipped jalebis. Also make sure that the sugar syrup is kept warm (45-50 C), you should be able to insert your finger & bare the heat. To shape the jalebis, move your hand in 2.5 circles & then moving on to shape the next jalebi in the same way, make jalebis according to the surface area of the pan, you can even change the number of circles as per your preference. Once you have shaped the jalebis in oil, fry them until they turn light golden brown from both sides over medium flame. Once fried, remove the jalebis from the oil & immediately dip them into the warm sugar syrup, keep them submerged in the sugar syrup for 30 seconds then transfer them into a sieve so that all the excess sugar syrup drips off. Your perfectly fried crispy jalebis are ready, garnish them with varak, chopped almonds & dry rose petals before serving.

Maine bahut channels visit karti hu for different recipes but aap na ekdam easy steps me batate ho. Aur aap jo explain karte ho small tips wo bhi kafi healpful hota hai. Main yaha matab sindhudurg district me ek small village me ek chota small village base shop cum cafe chalati hu where i serve chai and some snacks. Maine aap ko ek secret batata hu yaha sirf vadapav jada chalata hai but Maine yaha samosa cafe me serve karna chalu kiya wo to tufaan chalata hai... And secret is wo aap ki recipe hai chef. Yaha ganpati festival me mumbai se kafi log aate hai ,ganpati fest k liye tab Maine aap ki hi recipe wali dhokla bhi serve kiya tha. Maine everyday 2 kg dhokla banana tha for 12 days nonstop. Which is grt achivhament for me. Yaha gav me hat koi cast iron k utensils use karta hai. Hamare malvani language me ise bhide kahte hai. Making jalebis was a rage during the Covid lockdowns. Inspired, I'd tried as well, but only once and was left with a mess and gave up. I always wanted to try again, and your recipe with its precise proportions appears quite easy, and would be nice to give it another try-- this time WITH rabdi. To shape the jalebis, move your hand in 2.5 circles & then moving on to shape the next jalebi in the same way, make jalebis according to the surface area of the pan, you can even change the number of circles as per your preference.
Once you have shaped the jalebis in oil, fry them until they turn light golden brown from both sides over medium flame.
Once fried, remove the jalebis from the oil & immediately dip them into the warm sugar syrup, keep them submerged in the sugar syrup for 30 seconds then transfer them into a sieve so that all the excess sugar syrup drips off.
Your perfectly fried crispy jalebis are ready, garnish them with varak, chopped almonds & dry rose petals before serving.

Yaha gav me hat koi cast iron k utensils use karta hai.
Hamare malvani language me ise bhide kahte hai.
