    Description
    Kharakaddi is made by preparing a dough from gram flour mixed with spices and then extruding it through a chakli or murukku press into thin strips. These strips are then deep-fried until crispy. The result is a light, crunchy snack with a spicy and aromatic flavor profile.
    Ingredients
    Gram flour (besan) - 2 cups
    Rice flour - 1/4 cup
    Hot oil - 3 tablespoons
    Carom seeds - 1 teaspoon
    Asafoetida (hing) - a pinch
    Red chili powder - 1/2 teaspoon (adjust to taste)
    Turmeric powder - 1/2 teaspoon
    Salt - to taste
    Water - as needed (for dough)
    Oil - for deep frying
    Recipe
    1. Preparing the Dough:
    In a large mixing bowl, combine gram flour, rice flour, carom seeds, asafoetida, red chili powder, turmeric powder, and salt.
    Add hot oil and mix thoroughly until the mixture becomes crumbly.
    Gradually add water, little by little, to form a smooth, soft dough that is not sticky.
    2. Shaping the Kaddi:
    Heat oil in a deep frying pan or wok over medium heat.
    Load a portion of the dough into a chakli/murukku press fitted with a single-hole or fine sieve plate.
    Press the dough directly into the hot oil in a circular or random shape. Avoid overcrowding the pan.
    3. Frying:
    Fry the kharakaddi over medium heat, turning occasionally, until it turns golden brown and crispy.
    Remove the fried kaddi using a slotted spoon and drain on paper towels to remove excess oil.
    Repeat with the remaining dough.
    4. Cooling and Storing:
    Allow the kharakaddi to cool completely before storing in an airtight container. This ensures they remain crisp for weeks.
    Tips:
    Adjust the spice level to your preference by increasing or reducing chili powder.
    Ensure the oil is not too hot, as it can cause uneven cooking or burning.
    You can add sesame seeds for added flavor and crunch.
