    A Rice Bowl with Chicken Teriyaki is a Japanese-inspired dish that features tender chicken breast, marinated and cooked in a sweet-savory teriyaki sauce, served over a bed of fluffy rice. It's often accompanied by colorful vegetables and garnished with sesame seeds, making it as visually appealing as it is tasty. This dish encapsulates the umami flavors typical of Asian cuisine and results in a comforting meal that's both satisfying and nourishing.

    Ingredients for a Rice Bowl With Chicken Teriyaki
    For the Rice:
    2 cups of rice
    3 quarts of water
    For the Chicken:
    - 1 lb of boneless skinless chicken thighs
    - Salt and pepper (to taste)
    For the Teriyaki Sauce:
    - ½ cup soy sauce
    - 1 cup of chicken stock
    - 1 tablespoon mirin or substitute with honey
    - 2 or 3 tablespoons brown sugar
    - 3 cloves minced garlic
    - 1 teaspoon minced ginger
    - 1 tablespoon arrowroot starch mixed with 1 tablespoon water (for thickening)
    For Serving:
    - 2 cups cooked white or jasmine rice
    - Steamed broccoli or stir-fried vegetables (like bell peppers, carrots, snap peas)
    - Sesame seeds for garnish
    - Chopped green onions for garnish

    How to Make a Rice Bowl With Chicken Teriyaki Step by Step
    Now that we have our ingredients gathered let's walk through each step of making this delectable rice bowl.
    Start seasoning the chicken thighs lightly with salt and pepper then place them onto a plate and into the fridge. This step is salt brining the chicken which will help good browning and tenderness. Minimum 2 hours or overnight. This step is optional if you are short on time.
    While your chicken marinates, prepare your rice by bringing the pot of water to boil and then adding the rice. After 10-12 minutes, check the rice for tenderness. When it’s done, drain the rice and place it back in the pot, covered. Let it steam off heat for 10-12 minutes before serving.
    Mix your sauce ingredients in a small bowl and mix until, it’s well combined.
    Chop up any veggies you'd like to include- steamed broccoli works exceptionally well! Steam or saute your vegetables. Alternatively, you can simply use frozen steamable mixes if you're short on time.
    Heat oil in your skillet over medium-high heat; add the marinated chicken and cook until golden brown, about 4-5 minutes depending on size on each side. Once it’s nicely browned and cooked, set it aside on a plate.
    Turn down the heat to medium and add the sauce onto the skillet. Scrape off the brown crispy bits off the pan; let it bubble up briefly until thickened before adding back in the chicken. Let the chicken sit in the sauce for 4-5 minutes in the pan until it thickens before serving.
    Time to serve! Place rice in bowls first then top generously with your flavorful teriyaki chicken followed by steamed vegetables-and don’t forget those sesame seeds and green onions on top for an extra crunch!
