    Lucban longganisa as we know today is quite different from how it is traditionally made. My grandmother used to make it. Meat is hand sliced into cubes . The spice mix are garlic, pepper, oregano, and pimenton or Spanish paprika for color ( now I think they use anatto or achuete as substitute). It is usually hang to age. This makes a huge difference in flavor. It has to be fried to a crisp which is not possible to the new version because they now use ground meat.

      So true. I love the old longganisa where the used oil turns pink then you put it on rice. Also small cubes of fat and meat can be seen when fried to a crisp.

      💯 agree! I heard, using pimenton was discontinued as it is bad for the health. I still love longganisang lucban but nothing beats the taste of the old longganisang lucban. I used to pour the pink oil in my rice and put salt on it🤤

      @@michywichyIt maybe not healthy if you use the fake pimenton which use artificial red color. I don't think this is the case if the real one is used which is also known as Spanish paprika.

    I like Cabanatuan Longganisa the most especially when you sesr the csse just enough for it to have the most maillard reaction.
    Its saltiness is perfect with vinegar and steamed rice. You can also get the ground meat inside and use it as a base for your pasta sauce.

    Longanisa was the first food I ate in the Philippines. Had some with my breakfast on the first morning of my arrival. I fell in love at first bite.

    Binalonan, Pangasinan - Binalonan Longganisa. Super savory and garlicky. I tried removing it from it's casing and made it into a "Burger Steak". After frying the "burger", I used the same pan to make the "steak sauce" which made it super flavorful.

    I'm from Nueva Ecija so we always buy Longganisa in Cabanatuan. There's like 3 or 5 kinds of Longganisa there. I like the garlic longganisa from Cabanatuan but my favorite Longganisa is from Alaminos. IT'S THE BEST LONGGANISA. I always buy some whenever we go to Alaminos. Instead of buying seafoods, I look for Longganisa in the market. I've tasted different kinds of Longganisa and the one from Alaminos is on the top my list. It has garlic in it but it is not too salty or has too much garlic. It is surely not as strong as the garlic Longganisa that can haunt you for the rest of day. Everyone knows this😂, when you eat garlic Longganisa, you'll be burping and your breath will smell like garlic for the whole day. The Longganisa in Alaminos has a perfect balance of ingredients or taste(im not an expert, dont me hahahaha). Gosh, watching this vid and talking about Longganisa makes me crave. It makes me want to hop on a plane and go back to PH right now. Then head straight to Cabanatuan or Alaminos to get some Longganisa.

    Ms. Dina Bonnevie is actively helping the local Ilocano longganisa vendors to have sustainable sales and let it be accessible nationwide. Generates more work for the mothers of the ilocos region. All of them are directly sent to the grocery "Pure Gold". That's where we buy whenever we crave Vigan Longganisa.

    I think Adobo also has a lot of variations! 👍🏼😁 I think it’ll be nice to see how they make it in other places. I’m from Cebu (but in CA now) and we have, in general, 2 types - the “uga” or “pina uga” (“uga” literally means dry) and the saucy one. And we also have humba, which a lot of people not from Cebu mistakenly call it adobo. I see where the confusion from though. Humba itself also has a lot of variations just in Cebu alone!

    All of them are soooo goood and a must try. Don't forget the Longganisa from Laoag, Ilocos Norte and of course yung Longganisa dun sa palengke sa Blumentritt na binabalik-balik ko at ng family ko na maraming bawang na may tamis - anghang na lasa. :)

    Vigan longganisa is the best. A friend of mine does their own homemade vigan longganisa. SO GOOD! Beats what you buy in the market.

    Alaminos longganisa, hands down. Definitely, the best. The only longganisa taste that's etched in my memory. Had a vacation there once almost a decade ago, and up until now, the taste of that precious dry and garlicky longganisa is still on my mind. No other longganisa has ever done that. Been to Vigan, Laoag, Nueva Ecija and have tasted Cebu's chorizo but all those pale in comparison.

    When I was a cook in the Navy, we made longanisa a few times each week for breakfast. The ones we got were small. About the size of your little finger, and very red! I’ve never seen them since then. I wish I could find them because they were good!

    Of the 8 i've tried 6 of them. For me the longganisas from tuguegarao, cabanuatuan and vigan are my top 3. Yummy!

      For me Cabanatuan longganisa is the best especially the batutay longganisa (beef hamonado)is the best!!! The rekado (garlic) longganisa of Cabanatuan compared to Vigan longganisa...my vote is still Cabanatuan longganisa.. everybody should try it!

    Baguio Longganisa, I guess as it takes from its neighbours, is also a de recado, garlic-based sausage. Also, I'm loving this a lot - this and its emic perspective , the Bahay Kubo Series, the Maranao vid. As an Anthropologist, this makes me kilig to the bones as Philippine Cuisine outside Manila (especially Southern Luzon) hasn't been made known enough kahit sa mga kapwa Pinoy man lang.

    Was looking for AKLAN's entry though. 😅 It's well-known in the Western Visayas Region and tourists always bring home as pasalubong. Rosa Foods has the best native chrorizo which is savory and garlicky. If you're a sweettooth like me, you'll love the one from Jocyl's 'cause it tastes like tocino but in sausage form. 😋 Fyi, we also have the smoked version in Aklan. And if you frequent Boracay, I'm sure you've seen and tried the chori(zo)-burger there. Kudos to you and your team, Kuya Erwan for another great content, especially by showcasing Filipino food. 👌🏻💕🇵🇭

    Longganisa Malolos is still the best for me. Tho, it is not mention here but it is delicious you should try it. It has two different types of Longganisa Malolos, one is sweet and the other one is garlicky. My favorite s the garlicky, the taste is really WOW! Especially if you dip it with Sukang Paombong!

    So glad you mentioned Cabanatuan . 👍🏼💃🏻 I am from Nueva Ecija, and it’s not that far you can drive north hehehe Batutay(another variety of cabanatuan’s longganisa) is so good! And as well as the longganisa from Alaminos, Pangasinan is really good. I currently reside in Italy so this entry just worsened the homesickness!!!! ☺️ hahaha merci beaucoup!

    I love Vigan longganisa but my most fave is the Alaminos. Tagal ko na di nakatikim nun since nagpapabili lang ako sa officemate ko lol. Lucban is also good since it’s garlicky pero siguro masyado ko nakakain kya prang normal na lang lasa haha. I was shookt when I tried Cebu chorizao. Nagulat ako binibenta sa mga ihawan at pungko2. I made a solo trip to Metro Cebu and I was just a little surprised na medyo kakaiba dun comprared sa Metro Manila except madami na ding malls ang buildings. Pinagsawaan ko din ung chorizo na un sa 3 days stay ko dun haha. Super unique talaga ang longganisa sa Pinas. Masama na lagi kainin kaso talagang guilty pleasure lol!

    For me its probably tge Bacolod one. I love smoked hamonado longganisa with spiced suka as ulam, also sweet chorizo as sahog like in fried rice. I find vigan longganisa too salty (the flavor is a bit off for me) but I love it in empanada, the egg and veggies goes well with it.

    How about adobo? Different regions have their own variations of it. When I lived in Bicol, they mixed gata. In Negros, they have this thing called Pinakupsan (which is technically called dried adobo) and when I was staying in Mindanao, their recipe is quite different as well. Loved this episode btw! 😊

    Longganisa Imus is also a great variant of the local sausages we have here in the Philippines. Also, the one from Laoag where I've had some of their longganisa in a food park near the capitol is also great.

    Favorite ko yan! Lahat yan gusto ko specially Lucban longganisa. Sarap, lalo na when it's fatty, crunchy and paired with spicy vinegar! For me, that's the best. Mejo putok batok lang if you eat a dozen in one sitting, mejo maliliit kasi sya kaya marami akong nakakain. 😁✌

    Alamino's, Vigan and Lukbans longganiza are my best choice! I like their garlicky flavor and not sweet. My favorite so far!

    I actually thought you would include our Longganisa here in Imus. The one you tried here when you had that food crawl in the South. (Big Ben's Kitchen) its tender, very garlicky, the fat and the meat is balanced too and you can even tell that its clean! (the longganisa itself on how its made) Super yummy!
