    I’m Jamaican and proud, I absolutely wash any meat that I cook. Like you Chris, Mama taught me and I won’t ever stop! I don’t eat from people for that reason. This new generation who gets their home training from Yahoo and TV do otherwise, then they wonder why they end up sick. Yep I said it.

    When he started talking about how nobody in the Caribbean gets sick cause we wash our chicken.. I felt that 🙌🏾 Chris I love your recipes keep them coming and stay safe🙏🏾

      Well, you are both wrong. People do get sick in the Caribbean with both e-coli and salmonella and just because it's not on your radar doesn't mean you are correct. Further, washing chicken doesn't eliminate viruses. Anyone who understands basic biology knows this. It is, however, important to wash the chicken because of other contaminants like fecal matter, etc.
      The cooking process is what kills bacteria and viruses, not the tiny amount of acidity used to wash the chicken for a fraction of a minute. Finally, the potential to get sick comes not from a failure to wash the chicken itself, but in cross-contamination that occurs after you wash the chicken and then handle everything else without properly sanitizing the surrounding area and utensils used to wash the chicken. For that, you need a bleach solution or some other sanitizer to wash the sink, bowls, knives, cutting boards, and your hands.
      It always fascinates me to watch these Caribbean cooking channels lecturing people as if they know with absolute certainty how to go about doing things yet they don't know basic procedures, cooking techniques, or even terminology, yet proceed to position themselves as an authority in cooking. I watch these videos to get a good laugh from time to time. It's like the blind leading the blind.

      Chris has a recipe on his channel for making green seasoning, which you can store in a jar the fridge for a few weeks. It is really delicious and adds a lot of great flavour and Caribbean notes to whatever you are cooking. It is called green seasoning as you use green herbs and vegetables, chopped finely or use a food processor, as the basis. I tend to use green onions, coriander leaves and parsley leaves as the basis for my green seasoning. I add olive oil and some lime juice, salt and pepper.

    I remember when I was a kid and I went to Jamaica on holiday my grandma use to make gungo pea soup. That was the must flavoursome meal I ever had in my life nothing I’ve had since could touch that for flavour. She use to cook it outside in a massive Dutch pot I swear that open air added to the delicious and hearty flavour.

    Hey Chris- I know that we kid around a bit on these comments but I had
    to tell you something. After watching and commenting on BBQ and cooking
    vids for years now, I gotta say that THIS is one of my all-time chicken
    videos! I love how you take the time to patiently show exactly how to
    prep the bird and stew the bird before the soup all comes together.     I use tweezers (kitchen use only) to pull those leftover feathers that I find in all my birds. This method sure saves my finger tips... keep on cooking, vlogging stay safe and stay healthy..

    I have never seen so much time and love go into making soup, if everyone around the world especially here in the U.S. cooked and ate like this all the time nobody would be sick, our immunities would be strong. This looks so delicious, hope to try and make this sometime, thank you for this recipe. Also, that is so sweet that you cook for your loved ones on the forefronts in the hospitals, I'm sure they appreciate this.

    Always a pleasure to be inspired by your recipes and techniques. I just tried rolling out long lengths of dumpling and cutting them. Usually I would just roll little ones one at a time. They turned out so fabulous! Loved the texture! And it was a nostalgic trip watching you chop up the chicken. And I thoroughly agree with you - clean that chicken 😅. “Caribbean people come to your house and dey see dat dey go fink yuh nasty...” 😅

    I don’t know other groups of people so I can’t speak on them but, I’ve never known anybody who is of black descent whether that be from the West Indies, Caribbean, Africa, and US who doesn’t clean there meat 👍🏾

      Erik Turner, absolutely!!!! Perhaps a different persuasion is told not to wash meat, WE HAVE ALWAYS BEEN TAUGHT TO WASH IT. Whether you use lemon juice, lime or vinigar. Never known anyone who uses these methods get salmonella. The key is also to thoroughly clean the work surface afterwards.

    Love hearing your wonderful Jamaican accent. Thank you for the wonderful introduction of cutting up a whole chicken. Appreciate comments about how the family members make traditional Jamaican dishes. I am impressed with all the vegetables in this soup as well as the herbs and spices. I can almost taste this soup dumplings and all. Thank you for sharing your talent and for adding those smoked ribs. Nice signature touch. Good on you for feeding the family healthcare workers.     I usually make tiny spinners but will be trying the dumpling the way you did it. Lovely pot of soup and no packet powder soup mix in sight. Great 👌🏽🤗

      Definitely. I find the key to a good soup is to season the meat well 24 hours before cooking. It makes a hue difference and I don't use any packet soup either.

    You are doing a great job. That’s how I clean chicken. Lemon juice, vinegar or lime juice with vinegar. Can’t stand the feathers and fat.

    Q: I was in Trinidad several years ago, so amazing. Do you happen to know, they had a local hot sauce that was everywhere. Man it was good. All the restaurants had it and it was amazing on chicken. I’d love to find some. Ive looked for it, but just don’t know what its called. this recipe made me hungry for it. :)

      Food scientists and chefs show the spread of bacteria, etc. 🦠 when washing. Many people do not do so correctly anyhow, so especially for them it’s counterproductive.
      People have been sickened by food poisoning and salmonella, etc. within Caribbean islands, as well. People are simply unaware (aka ignorant to that).
      Do what you choose. Be discerning for Self, solely; never judge nor manage any other. 💚

    Hey Chris, nice job it looks delicious as usual. You can add smoked turkey to it instead of the pork, It gives it an unbelievable flavor. Also you can boil your stock in a kettle before so you don't stop the boil in the pot. The other thing do is, I saw you put some parsley in there at the end but I save some seasoning for close to the end and put it in about a few minutes before it is done. It gives that fresh seasoning flavor as you drink it fresh off the stove. One more thing, when I cut the head and bottom of the green banana I put them in a bowl and pour hot water over it from the kettle for a few minutes. the skin comes right off and the pulp itself does not get cooked and no sap.
