Marmalade Steamed Pudding Recipe

  • A delightful steamed pudding, it can be made with any orange marmalade, but the best one would be homemade Seville orange marmalade, could also be made with other marmalade, but without quite the impact. Although I include Australia's own macadamia nut, blanched almonds could be used.
    Serves 8
    Ingredients:
    100g unsalted butter
    150g sugar
    2 large eggs, lightly beaten
    100ml buttermilk
    200g self-raising flour
    50g chopped macadamia nuts
    1 tbsp orange liqueur (such as Cointreau
    or Grand Marnier -- optional)
    3 tbsp orange marmalade
    Method:
    Beat butter and sugar in a bowl until creamy and all sugar has dissolved.
    Beat in eggs, one at a time.
    Beat in 2 tbsp of marmalade.
    Beat in buttermilk.
    Add orange liqueur, if using.
    Fold through flour and macadamia nuts (do not overwork).
    Put remaining spoonful of marmalade in bottom of a greased 1 litre pudding basin.
    Pour in pudding mixture.
    Cover with a circle of non-stick baking paper.
    Tie on cloth.
    Put in large saucepan of hot water, which comes halfway up the bowl.
    Put lid on saucepan and simmer slowly for 2 hours.
    Degree of difficulty: Low/medium.
    Keepability: Keeps two or three days in the refrigerator.
    Serve with... freshly made custard, vanilla ice-cream or cream.
