Hi Gemma ,made this today, the sponge is so light and chocolatey, absolutely fabulous, only issue was l forgot to wait the ten minutes before turning out so was a bit messy😜 but will definitely be making this again. Thanks for great recipe!

Yum! I made a steamed sponge cake not too long ago for my mom. It did puff up nicely, but didn't taste that great as the baking soda came through too much and it wasn't that sweet either. But I do hope to try this one and see how it goes as my mom loves steamed cake in general.

Lovely!! I remember having the Tesco Christmas puddings when I was a student in Dublin :) It came for €3 and I would just have to microwave it. I'm sure the actual steamed version (like the one you've done) is the best, but that pudding was pretty delish! Overall a great way to make cakes without an oven!!

Can a metal pudding mold with a clamp-down lid be used{I have one}, or does it have to be ceramic bowl type?

Ooh! I hadn’t seen that you’ve got steamed pud recipes! I bought a pudding basin a few months ago and tried my first ever steamed pudding and wow was it amazing! Quick question though. I’ve been using the Instant Pot to steam them. I select the steam function, not pressure, but on mine the lid seals automatically so there may be some pressure building up. Should I reduce the cooking time? They’ve been fabulous and moist and dense on the day they were cooked, then the next day after a night in the fridge they go a bit hard. Almost like stale. You wouldn’t want to eat it cold, but a quick zap in the microwave and it’s back to amazing. Is that normal or have I overcooked them by using the Instant Pot?
