By far the BEST cookies I've ever eaten in my LIFE. The only thing I noticed was that if you roll them into balls and compact the dough, your cookies will come out thick. If you want them thinner use an icecream scoop like Gemma did so it's not dense and there is more air incorporated into it.

Yeah I made that mistake. I made 18 of them using a spoon , then another six with ice cream scoop and squashed them a bit. Much better result. (I have to also admit that I used my late mother's stash of turbinado and my molasses mix for my brown sugar cuz that's all I had. While it tastes great, it is way too coarse. I need to get more regular organic sugar for that purpose). The rest of my dough is now in the freezer squashed.
Well mine came out really thick too even if I used an ice-cream scoop, measured and weight everything. Not sure if it needs baking powder at all. A bit disappointed. I’ll try a different recipe.

I've tried several CC cookie recipes, this adjustment looks looks like the best! Have you ever tried coconut oil?! So far replaced butter with coconut oil in my banana bread & also in my brownies, amazing! Mahalo

I made these, following your recipe exactly. My dough was not as runny as yours was, but I still put it in the fridge for 4 hours. After baking for 12 mins at 375, they did turn out crispy on the outside, but somewhat cakey on the inside, not chewy as I was hoping. Maybe I will cut down on the baking time to see if this helps. Thanks for a wonderful recipe.
Hi Kristi. Your may have needed more time to bake. Ovens don't always function or perform the same way. Hence, some recipes may need more baking time.
Chewy chocolate chip cookies are my favorite by far! I do agree with the vanilla extract part! I love using vanilla extract after watching your channel ever since my college days!
I mixed these up yesterday and baked them today and they were lovely but I messed them up a bit. It was my own fault, I’m not that keen on dark chocolate so I substituted it with milk chocolate.
The cookie dough is so lovely and sweet that it did need the stronger flavour of dark chocolate to balance it out. Mine are a bit too sweet (and I never say that about a cookie!). I tasted the raw dough before chocolate was added and it was delicious so I know the end result was down to my substitution. It’s obviously not the end of the world, it just means I can only eat one cookie at a time (😱) which is unheard of for me.
I will DEFINITELY make them again but I’ll make sure to use the right chocolate.
Practice makes perfect! We’ve all been there, and really, you are doing fine. 😊

I would like to say that this recipe is kind of a Gourmet recipe.. because of the olive oil.. In countries like India, Olive Oil is quite expensive.. so for us it isn't quite feasible to make these every time. Though, I'd like to give it a try
Hi. You can use another kind of oil. Olive oil just gives it a more flavorful cookie profile.

For how long do I need to thaw these before baking if I freeze the dough balls?
Hi Ahsan. You can bake it when it’s soft enough for you to scoop the dough. It’s best to bake these very cold in a very hot oven.
When I grew up everyone used only Salted Butter in baking/cooking. I blame Martha Stewart & the Food Network for perpetuating this Unsalted Butter trend (scam)
Hi Gemma! I’m planning on making the cookie dough today and bake them off tomorrow morning which I’m super excited about. :) I was wondering, can I keep the cookie dough until upcoming Friday in the fridge and bake it the latest on the same day? Is it possible to store it for that long?

Ingredients :p
½ cup (4oz/115g) butter (softened)
1 ½ cups (9oz/255g) dark brown sugar
½ cup (4oz/115g) granulated sugar
½ cup (4floz/115ml) olive oil*
1 tablespoon vanilla extract
2 large eggs (room temperature)
2 ¾ cups (14oz/397g) all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon sea salt
1 1/2 cups (225g) bittersweet chopped chocolate
Bake at 375F for 12 mins

I just tried it and it was excellent! Followed exactly what Gemma did!! But I did it by hand so I microwaved my butter till it became soft and then added the sugar! I almost cried because every time I baked cookies it always comes out hard but THIS recipe was a gem!! Thank you Gemma!!! 💖 thanks for helping us through these simple steps!

I did the 'pan bang' back in the late 80s. But instead of banging the pan, I took the cookies off and slapped dropped them on the counter to create the wrinkles.
coconut oil won't work because just like the butter, it's solid at room temperature. the reason oil works here is because it's liquid at room temperature.

I'm making this again today for muslim Eid holiday but in mini version. I just don't know how long this cookie will last since most of our cookie(or we say "kuih") stores in jar last about a month or more at room temperature
Update: i forgot that this i need to lessen the sugar in this recipe. It was too sweet for my people tastebud(kid will go crazy for it). I've already chill it for 6 hour. Is there a way to make it less sweet. Adding more flour at this time will break the dough right?
I'm afraid it would be tricky to add more flour at that point. Yes, it will affect the consistency and texture of the cookie if you just add flour. It is possible to add a little more flour, but do so with caution.

This is the best chocolate chip recipe that I've ever tried. I've made it 5 times! However the last 3 times I've made it, I used 2 cups of brown sugar and 1/4 cup of white sugar. I love the taste of them with more brown sugar and less white.

I have just tried making this chewy chocolate chip cookies but however it does not flatten like yours and it isn’t chewy. Did you use the fan function to bake it?
Hi Audrey. I baked these in a standard oven, fan off. It may be that your measurements are off, or your flour needs more liquids (wet ingredients). Flours do not absorb liquids the same way; some may need more, others less than the amount in the recipe. You can add more butter to your dough, as that is what spreads the dough when baking. Chill to age, then bake. Hope this helps.
I’ve tried the recipe 2 to 3 times now. The taste was absolutely amazing. 😍😍😍
However, mine didn’t turn out to flatten as much as yours and were a bit more on the fluffier side

1. your dough might have been on the dry side. Flour in different places behaves in different ways, depending on how, where, when and the type of wheat grain being milled. They absorb liquid differently. You may need more for yours to get the same consistency with mine,
2. You might have over handled the dough which strengthened the gluten to prevent them from spreading . Make sure all ingredients are at room temperature and mix until just combined.
3. Or if your oven runs higher than mine, your chocolate got burnt too fast and the outside of your cookies hardened too fast so they could not spread as expected.
I DO recommend chilling your cookie dough in the fridge or freezer. However, baking from frozen will affect the texture. Let frozen cookie dough sit at room temperature for 10-15 minutes while preheating the oven then bake them until the edges are set and the cookie is beginning to turn darker or golden brown throughout, but still doughie and a bit pale in the middle. They will set more while cooling down.

I am a big fan of baking with olive oil (those more to the fruity side rather than peppery/spicy side) and usually use a mix of fats, but citrus, nutty and honey/cinnamon cakes fully deserve 100% olive oil!

@@biggerbolderbaking i did. Yesterday is my 2nd time wih the same recipe. The difference is my 1st time last 2 month using coarse brown sugar, salted butter & extra virgin olive oil. Yesterday dark brown sugar, unsalted butter & extra light olive oil. Taste both dough & I think i prefer yesterday raw dough better...hopefully i'll love the cookies this time
If I only have extra virgin olive oil, what do you advise I do? Use a mixture of that and a flavourless oil?
You can do that. You can use any kind of olive oil and it will still come out grand. But you can also lessen the amount a bit, if you do not want a strong flavor.

Technically, you can. Self raising flour contains baking powder, hence the cookies will most likely be cakey.

There are many cookies I like rather crunchy, soft & chewy, & many flavors chocolate chip, oatmeal raisin, shortbread, vanilla, Oreo so many to name even those giant ones people call monster cookies cause it has so many things inside them

There's just one thing I'm concerned about. My cookies don't really melt as yours do and it doesn't flow when I do the pan bang. The chocolate remains somewhat solid.
Could it be because the vocoder become cold after chilling the dough?
Could I add the chocolate after chilling the dough just before baking?
